Chicken Souvlaki with Tzatziki Sauce

I did not make the chicken from this recipe, but I did make a variation of the tzatziki sauce. Although this recipe did make a decent base for the sauce, I did change some things and it tasted pretty close to the sauce I've had in Greek restaurants. I added about 1 tsp. of lemon juice and about 1 tsp. of fresh oregano. I also had a dried spice blend on hand that contained shallots, onion, garlic, lemon peel, chives, and orange peel. I added about 1/4 tsp. of this and it really gave it the boost it needed. I personally do not like greek yogurt so I substituted the same amount of light sour cream instead and it was delicious.

Pasta with Swiss Chard

I had some late-season swiss chard to use up from my garden and stumbled across this recipe. I was actually not expecting much, but it was a new way to use some ingredients up. I was shocked at how delicious and flavorful this recipe was! I did listen to one of the other reviewers and added an extra clove of garlic and made sure to season well with salt and pepper. I am not at all a fan of whole-wheat pasta, so I used a specialty pasta that was flavored with lemon and chive. Next time I may add clams or shrimp, but it was extremely delicious without those additions!

Thai Chicken Spring Rolls

These are really, really good. They took me awhile to "perfect," but after I've made them a few times, they turn out great. I usually use a lot less watercress and more cilantro just because watercress is extremely expensive where I live. The only suggestion I have is to just wet the corners of the spring roll wrappers when rolling them instead of dipping them in water. They would fall apart and get too mushy for my liking when dipped. Roll them up, THEN brush them with a bit of water to soften them up. YUM!

Chilled Tomato Soup with Seared Scallops, Avocado, and Ripped Basil

This was pretty tasty and light. I used bay scallops instead of sea scallops which wound up being a mistake. Trust me- splurge on the more expensive sea scallops.

Veggie Pizza

This was pretty good, but make sure to let it chill overnight so that the ranch blends into the cream cheese all the way. The flavor seemed much better the second day after letting it sit a bit longer.

Butternut Squash Pizzas with Rosemary

Wow! I was a bit skeptical at first of this recipe, but it was delicious! I listened to one of the other reviews and brushed two pre-made personal pizza sized crusts with olive oil and garlic first. I will DEFINITELY be making this one again!

Lemon Lavender Avocado Loaf

Soooooo good. I used about one tablespoon of fresh lavender, and could hardly taste it. I will get gutsy and increase the amount quite a bit next time! This would also be tasty with a light lemon glaze over the top.

Baked Cod with Roasted Red Pepper Horseradish Sauce

I had to play around with the sauce since I had horseradish instead of horseradish sauce, but it turned out great on the end. I make this for chicken instead of fish and usually crumble saltines on top for a bit of crunch.

A Farewell to Basil Fettuccine

In the end, this turned out really good, but I had some trouble getting the dough to the correct consistency in the beginning. I had to add quite a bit of water to keep it from completely crumbling apart as it rolled through the pasta maker. I love the fact that there is only one egg in it too. It's nice to find an egg pasta recipe that is not loaded with cholesterol. Definitely a keeper.

Coconut Curry Tofu

This dish was very yummy overall. The only things I would change next time would be to use regular coconut milk instead of light (the sauce was a bit thin), and to add more curry powder and chili paste. Otherwise, it was perfect. I will definitely be making this again!

Chicken with Chipotle

The sauce is really, really delicious on this! It is very good mixed with rice. The only change I would make would be to use chicken breast or wings, but that is just really a personal preference. Really tasty overall!

Lentil Chili

Was not a fan. It was pretty bland and was more like a soup than a chili. Definitely not hearty if that's what you expect from a chili. Could be good if beans were added and a lot more spices. Cheese and sour cream help too...
