Macaroni Salad

Reviewed: Oct. 5, 2011
I doubled the recipe and reduced the mayo by a cup because I'm not a mayo person. I made it the night before I served it and I was told it could have used the extra cup of mayo since it sat overnight and dried a little. I thought it was perfect when I tasted it but that's because I tasted it right after I made it. I recommend if you are serving it the same day to reduce the mayo, but if you are serving it the next day, keep the recipes recommended amount. Also, I added salt and pepper to taste and chopped the egg over the salad. Yum!

Perfect Apple Pie

Reviewed: Sep. 29, 2011
Only used recipe for filling since I used another yummy recipe for the crust. Instead of adding cinnamon and nutmeg I used an all spice seasoning. Loved adding the lemon juice, it really added a zing to the pie. Absolutely delicious!

Cajun Potato Soup

Reviewed: Sep. 28, 2011
Doubled the recipe and reduced the cream in half. It turned out delicious. I took this to a soup pot luck and everyone loved it! I barely had enough left after the event. A must soup to make in the fall!

Apple-Raisin Breakfast Bread Pudding

Reviewed: Sep. 13, 2011
This is my first bread pudding and it came out amazing! I didn't re-fridge the bread pudding over night, but I did soak the bread for 10 mins and made sure the bread was fully soaked. I made half the recipe, used all milk instead of adding heavy cream, and also instead of having plane chopped apple for the top I added 1 tablespoon of butter (melted), 1 tbsp brown sugar, 1/2 tsp of cinnamon. Mixed it all together and spread it over the bread pudding. It came out tasty, moist, and perfectly sweetened. And, instead of using nutmeg, I used a all spice blend to give it more of a stronger spice taste. My husband ate half of it and he's not a fan of bread pudding. I will be making this again for sure.

Rich Chocolate Frosting

Reviewed: Sep. 9, 2011
recipe is extremely chocolaty and creamy. I made half the recipe which was enough, but I did add the 1/2 cup of milk to create more of a smooth and creamy and not so dry frosting. It was yummy!

Chocolate Cupcakes

Reviewed: Sep. 9, 2011
recipe is very chocolaty and yummy. The 16 serving was a perfect amount for my 12 cup muffin stoneware. I filled them 3/4 fill and cooked them 4 minutes more then recommended and they came out moist. I sprinkled a caramel sprinkle to add a crunch.

Grilled Bacon Jalapeno Wraps

Reviewed: Sep. 3, 2011
We make these every time we BBQ. We cut the jalapenos in half and cut the stems off, then we scrap the seeds out, be careful for flying seeds! They seem to turn up everywhere, and use gloves if you become sensitive to the jalapeno heat. You can also bake them in the oven at 375 until they are crisp, the bacon fat always makes it tastier but less healthy.

Honey-Wheat Muffins

Reviewed: Aug. 30, 2011
This recipe was easy and yummy. You can't go wrong with butter and honey mixed together, though my muffins did brown around the muffin bottom and sides, I think I might lower my oven temp to 375 next time. But, was rather pleased, and will making this for thanksgiving. Thanks.

Peanut Butter Brownies I

Reviewed: Feb. 26, 2011
Recipe is easy to follow and really delicious. I used wheat flour and used unsalted peanuts. I poured 1 cup of chocolate chips on top of the brownies after they were baked. I turned the oven off and placed the brownies in there so the chocolate would melt (few minutes). Then I evenly spread the chocolate all over the brownies. They are absolutely delicious!

Sweet Potato Potato Salad

Reviewed: Jan. 9, 2011
One of the best potato salad recipes ever! So easy to make and healthier then the store bought salad. I did reduce the amount of mayonnaise by 1/4 cup and used a sweet onion which didn't give it that onion taste. Also, I pulled the sweet potatoes out about 5-10 mins early because they cooked much faster then the regular brown potatoes. All in all, a wonderful recipe!

Whipped Cream Cream Cheese Frosting

Reviewed: Jan. 7, 2011
I'm definitely going to make this frosting to cover my daughter's first birthday castle cake. I made a 2 serving batch to see how it would taste and look compared to a butter cream frosting. And it came out delicious and the texture was what I was looking for. It was so easy to spread and wasn't too runny, too thick, or too sweet . I can't wait to make the actual cake and spread this taste bud watering recipe over my castle cake. My frosting did come out a little bumpy, but I think next time I will use room temperature cream cheese.

Chicken Pot Pie IX

Reviewed: Oct. 20, 2010
This recipe was so easy and really delicious! I added 3 red potatoes thinly sliced (1 layer on the bottom of my deep pie dish) and 1 cup of green beans, I boiled them with the rest of the boiled ingredients. And, I used wheat flour instead of regular white flour, turned out amazing.
