Easy Lemon Pie

We really enjoyed this recipe. It was easy to follow and way quicker than making a traditional lemon meringue pie. After reading some of the other posts about the filling not setting I did not want to take a chance so I did add 1 tablespoon of corn starch mixed with a touch of water to the mixture while cooking. I also added 3/4 cup of lemon juice instead of 1/2 a cup, simply because of our personal preference for a tangier pie. As others did, I too beat the egg whites with 1/4 cup of sugar to top the pie with a meringue. Some people posted the over whelming taste of the sweetened condensed milk but I did not have that problem. Maybe they did not cook it long enough or it could also be that I added corn starch and more lemon juice than what the original recipe called for. All in all we really enjoyed this pie and I will definitely make again. The next time i think i will double the recipe because the original as is does not fill the pie crust. A great recipe though. Thank you!

Boston Baked Beans

We had a bbq potluck at work and I was chosen to bring baked beans. I wanted to take something other than just out of a can beans. I had never made my own baked beans before but found this recipe and it seemed easy so I thought I would give it a shot. Let me begin by saying.........FANTASTIC!!! Everyone loved them. There is one person who does not eat pork so I made them without the bacon and they still came out great. I can not wait to make these again but with bacon this time. Let me note that besides omitting the bacon, I followed the recipe to a tee maybe that's why some people complained in earlier reviews that they are a bit too salty for them so just cut the salt to 1 tsp or omit entirely. I do not have a 2 quart baking dish so I used a regular 9x13 pan I covered the beans with the reserved juice, baked for an hour and 1/2, uncovered, added a bit more juice and stirred, baked uncovered for another hour, stirred in a bit more juice and baked for another hour and they came out perfect. I did not give this 5 stars but JUST because of the cooking time but I am definitely keeping this recipe and it will become a family fav. Thank you so much!

Gingerbread Men

These were great! I did substitute margarine because that's all I had. Make sure and chill dough thoroughly because it is very sticky, I chilled mine overnight. they package very well and are not too fragile. Not too gngery either and you can not taste the butterscotch, if you like ginger you may want to add an additional tsp but otherwise a great cookie. Thanks for sharing!!

Crustless Cranberry Pie

Very good and super easy! Next time I will double and bake in a 9x13 pan because as others noted it is more "bread" like. It also tasted better the next day after being stored in the fridge. We didn't think it was too tart at all. A good company coffee cake.

Alyson's Broccoli Salad

One word......AWESOME!!!!! My nephew said this was the most delicious salad he has ever had in his entire life and his new favorite! I left out the sunflower seeds (did not have any) and I also used regular white vinegar because that's all i had in the pantry & real bacon pieces in a jar for ease & time (not Bacon bits) It was yum yum!!

Yummy Sweet Potato Casserole

I wanted something different other than the usual candied yams for Thanksgiving this year & found this recipe. My husband who NEVER eats the candied yams devoured these and refused to share! LOL!! =) I used 2 large cans of yams which I mashed with a potato masher in a large bowl then added everything else. I used brown sugar instead of white (personal preference) and the amount of crumb topping was perfect for a 9x13 pan, baked as directed then added a layer of miniature marshmallows & returned to the oven to brown. This will definitely be made every holiday for my family. Delicioso!!!

Super Simple Salmon

This was AWWWWESOME! I doubled the the recipe, left out the salt, used italian spice (did not have basil) and added 1 tablespoon of lemon pepper. I also "blackened" it by cooking it on a slightly higher heat and served it with a side dish of herbed broccoli brown rice. Next time I will post a picture. We all loved it and it was so easy! Thank you! Thank you! Thank you for sharing!!

Baklava

Very, very good and so easy. I gave it 4 stars because I did think it was a tad too sweet but that was just me. My husband loved it as is but I think the next time I will add just 1/2 of the syrup. Mine did not get soggy at all. It was crisp all the way through and as for the lady who claimed 50 minutes was too long and hers burned, I did not have any problems with it at all. It came out light and crispy and perfectly cooked. Maybe your stove needs to be calibrated? Just a thought. I will definitely make again and again!!! So easy and very inexpensive to make. I had all the ingredients on hand and the phyllo dough was only 2.38 for a 16 oz box.

Italian Spaghetti Sauce with Meatballs

Tasty. I only made the meatballs. Next time I will cut down on the bread crumbs. Mine were a bit dry but then again I only had store bought bread crumbs not fresh.

Very good and easy. I do not have a bread machine nor a kitchen aid but made this by hand. My husband loved it, he said it reminded him of sourdough bread. I will definitely make it again! = p

Mexican Style Cornbread

This is a great recipe and almost identical to the way I make mexican cornbread. My version is simplified though, I use 2 boxes of premixed cornbread mix instead of having to measure out the dry ingredients and I use canned jalapenos instead of fresh. If I don't have cream corn, a can of regular corn, drained, works as well but I have also used frozen corn which gives it a fresher, crispier result. Overall, very yummy which ever way you decide to make it!!

Grandpa's Popcorn Balls

This recipe was awesome and so easy. I was craving caramel popcorn one evening and decided to make these. I used brown sugar instead of white and omitted the vinegar. I also used microwave popcorn, a 3.5 bag makes 10.5 cups of popped corn so I popped 2 bags. I also did not feel like making balls so I buttered a 9x13 pan, spread out my popped corn and just poured the syrup over the corn. I also used a candy thermometer in combination with the ice water test because at hard ball stage the syrup still was not hard enough. Will definitely keep this for future use!!! Yum yum!!

Rich Chocolate Truffle Pie

Homemade Flour Tortillas

I make my own homemade tortillas all the time without a recipe and I wanted to try this recipe to compare. You will not be disappointed!! My husband could not tell the difference!!! The only thing I did differently was I used 2 tsps of salt. Quick note: lard makes these better but you can substitute shortening if you have to.

Miss Betty's Super Quick Dinner Rolls

I needed a quick recipe for rolls to have with dinner and these were a hit. Kind of "biscuitey" but served its purpose and I did not have to roll them out. Quick, simple and good!! Will definitely make again. To those of you who could not get them to brown, I baked mine at 450 degrees for 8-10 minutes. I also did not have "self rising flour" on hand but made my own. 1 cup of flour, 1 1/2 tsp of baking powder and 1/2 tsp salt, plus for extra flavor 2 or 3 tablespoons of sugar. EASY CHEESY!!! = D

Chinese Restaurant Almond Cookies

DO NOT, I REPEAT, DO NOT USE MARGARINE!! I substituted margarine for the lard and they were hard and not very tasty. I'm going to give this another shot and use the lard, cross your fingers!!

Crunchy Oven Fried Tilapia

Did not care for this much. The coating looked as if it was raw and needed browning. I tried spicing it up a bit but.........it was still blah. Will not make again.
