Green Tea Mint Cookies

This is a fun recipe. I made mine gluten free, using my own blend of flours and 2 tsp. zanthum gum. I also used 1/4 tsp. vanilla, 1/2 cup agave nectar instead of honey, grapefruit tropical green tea, 1/4 tsp. peppermint oil instead of extract, added about 1/2 cup of chocolate chips (which work great if chopped up). Mine turned out speckled, not green like the picture, but they still look pretty nice.

Pesto Quinoa

I really liked this. I had some already cooked left over quinoa from another recipe (about 2 cups). I put in at least 2 heaping TBSP of basil, tomato pesto, a TBSP of sundried tomato bruscheta, chopped up about 1/4 cup pecans, 1/2 a tomato (all I had), 3/4 cup fresh spinach. It is really yummy. I will serve it on a bed of spinach as a side for dinner. Quinoa is so nutritious and whole grain.

Curry Broccoli Salad

My 4 yr. old son, who vehemently hates broccoli, loved this salad. He gave me his pizza back so he could have more broccoli salad. I doubled the curry powder, used raisins instead of cherries, used raw sunflower seeds, and used natural sugar, and everyone in the family loved it. My mom thought I bought it.

Alfredo Sauce

Yum! I used whole milk instead of cream and it was a little runny, but it tasted very good. Maybe next time I'll add a little corn starch to a small amount the milk before I mix it in.

Grandmother's Buttermilk Cornbread

Loved this recipe! I made it with my gluten free flour mix and added some xanthum gum. It was really good and crispy brown on top. My husband liked it too.

Paleo Pancakes

These were OK. I quadrupled the recipe and maybe that was part of the problem, but they were really thick and really dry. I added milk twice to even be able to scoop them onto the skillet. We had to put lots of syrup and applesauce on them. I added walnuts and chocolate chips to the batter, which gave them good flavor. My family ate them and didn't complain much, but for me it was a lot of work for little benefit.
