Pineapple Upside-Down Cake V

I've made this cake several times now, always to rave reviews. A few notes: - I've tried Pillsbury Moist Supreme Butter Recipe Yellow cake mix, and both Duncan Hines Butter Recipe Golden and Pineapple cake mixes. The pineapple cake mix gave a stronger pineapple flavor (of course), but I got the best/moistest cake out of the Pillsbury mix. - I've had good luck with Land o Lakes Baking Butter...otherwise I use the ultra creamy variety. - **Try the coconut!** It doesn't taste like you think it will. It adds SO much to the flavor/look of the cake! - It's sometimes hard to gauge the baking time with this one...the toothpick test can be deceiving. Just keep an eye on it. - Another reviewer suggested this and I always do it because it WORKS...after layering the cakes, place the pan, upside-down, back onto the top layer. Remove it after about half an hour; this should take care of the cracking problem.

Apple Crisp II

Mmm, just like mom used to make....this one gets rave reviews from me AND everyone I've ever fed it to (my boyfriend said it was "dangerously good"). I halfed the apples and doubled the "crisp" for a better balance...I can't imagine how that much crisp can be enough to cover ten cups of apples.

Very Fruity Rum Punch

I have made this punch on several occasions, usually doubling the batch, and every time I've run out early. My friends call it "dangerous", because it's just so sweet and fruity and easy to drink that you tend to forget about all the rum. :) A friend of mine liked it so much, he asked for the recipe to use at his wedding reception. I don't think it's really possible to screw this one up, even if you're following the directions loosely. I recommend Captain Morgan's Spiced Rum in this mix.

Mexican Baked Fish

So fast and easy and delicious...this is probably my best "find" on allrecipes. The fish you use definitely makes a difference, so buy fresh! I generally skip the avocado and serve this like a taco, with tortillas, tomatoes and lettuce off to the side. Mmm.

Baker's Secret Pie Crust

I'm not sure it's entirely worth all the effort, but this crust did turn out as flaky and delicious as other reviewers say....I think it "saved" my rather tart pie in the end. The cake flour makes a difference (not a huge difference, mind you, but a difference nonetheless). I didn't have a large enough food processor, so I cut in the shortening and butter with forks as suggested by other reviewers. I did find I had to cook the pie a little longer than usual in order for the crust to cook all the way through, but this may just be my oven, so I could only suggest keeping an eye on it.

Valentine Heart Breadsticks

Four stars for the idea...very cute...I arranged them in a wooden bowl for an attractive addition to our Valentine's day dinner. The thyme was a little overpowering however...unless you are a big fan of thyme I would suggest omitting it, or using it very sparingly.

American Lasagna

A delicious, simple recipe similar to the one I use. For a leaner dinner, I recommend subsituting turkey for beef (it's just as good! Even my red-meat-loving man admits it). Also I substitute 1 cup cottage cheese and for the ricotta (mixing together the cottage cheese w. 15 oz. ricotta - adds interesting texture and flavor!)
