As one reviewer suggested, I sauteed the garlic and onions with the curry powder until they were translucent. I then added a 28oz can of tomatoes, partially drained, and stirred until there was no more curry powder stuck to the bottom of the skillet. I added 1.5 cans of tomatoes, the sugar, 3 cubed red potatoes, and omitted the tomato sauce.
End result: delicious! Next time, I will add some red pepper flakes and a little more curry powder to bring it up to 5 stars
