Curried Lentils

Quick and easy. I doubled everything but the curry paste (I used Thai red curry paste), and used a full can of coconut milk. I added approx. 1 teaspoon each of fish sauce, lime juice, and brown sugar, as well as some shredded carrots and green onion. Next time I would probably use slightly more curry paste, but I like my food with a bit of a kick!

Curried Coconut Chicken

As one reviewer suggested, I sauteed the garlic and onions with the curry powder until they were translucent. I then added a 28oz can of tomatoes, partially drained, and stirred until there was no more curry powder stuck to the bottom of the skillet. I added 1.5 cans of tomatoes, the sugar, 3 cubed red potatoes, and omitted the tomato sauce. End result: delicious! Next time, I will add some red pepper flakes and a little more curry powder to bring it up to 5 stars

Pancakes on the Go

Very good pancakes. Next time I will reduce the sugar to 1/4 cup and add some cinnamon and nutmeg. My husband had these with maple syrup, while I served mine with clotted cream and cherry jam or just plain! A great way to start the day.

MMMMM... Brownies

Delicious! Moist, chewy, and gooey. 25 minutes was the perfect cooking time for these brownies. These are also very quick to throw together - 10 minutes max, and you can wash the single pan while they bake and still have enough time for a cup of tea before the brownies come out of the oven!

Lentil Soup III

Delicious, and so easy! I added the full can of tomato paste as some other cooks suggested, and supplemented the cumin with some cayenne pepper. I used vegetable broth instead of chicken, and added some water with a bouillon cube. I had four stalks of celery, so I chopped those and added with the onion. I will definitely be making this again.

Sunday Gumbo

This was truly excellent. I had to make some substitutions based on what I had in the kitchen (fresh tomatoes instead of canned, etc.) and the recipe held up very well. I highly recommend it!

Savory Spinach Casserole

Very good! I had cream cheese and fresh spinach to use and didn't want to buy more, so I halved the recipe. I also added half an onion and approx. 1/2 tsp garlic powder, plus 1/8 tsp of pepper and salt. I will DEFINITELY make this again, and next time will try adding monterey jack or swiss cheese and some fresh garlic.

Chocolate Chip Coffee Cake

This made for a delicious start to the morning, and was relatively easy to make. I agree, it is very good with a cup of hot tea! I'm giving this 3 stars instead of 4 because the batter was SO thick that it was difficult to spread. It took about as long for me to spread the batter evenly in the pan and then over the filling as it did to make the batter! The filling could do with a bit less chocolate chips as well - it was delicious, but VERY chocolatey!

Lemon Barbeque Pork Chops

A solid recipe. Quick, easy, and very inexpensive! My recommendation would be to marinate the pork chops for at least an hour in order to get more of a barbecue flavor.

Fast Creamy Tomato Penne

Very good, and lends itself easily to substitutions. I omitted the bell pepper, and added more onion. I also added approx. 2c spinach while I was sauteeing the onions, and some crushed red pepper when I added the spaghetti sauce. Delicious!

Peppermint Fudge

Easy to make, and delicious. Note that you really do need to add the peppermint candies on top to get more of a pepperminty flavor. I recommend adding more extract if you'd like the fudge to have more of a peppermint flavor from within. I'm giving this 3 stars instead of 4 because I already have an excellent fudge recipe!

Bell Peppers and Pasta

My goal for the year is to make more meatless dishes -and this one went over well with me and my fiance! Unfortunately, I didn't have all the ingredients mentioned, and my fiance and I don't like olives, so I didn't add them. I quite enjoyed the modifications I made, and I bet the dish is even better in its original form! Here are my modifications: 2c green pepper instead of 1c red, 1c green no olives added more oregano added basil added more water used shell pasta instead of penne colby jack and cheddar cheese instead of feta

Cumin Chicken With Apples

Delicious! Chicken turned out moist and juicy, and the sauce was delicious. Preparation time was longer than I had expected, though. This is not the recipe to choose if you're looking for a quick dinner - but it is worth it!

Roasted Curried Chicken with Couscous

I didn't make the couscous so I can't comment on that. Chicken was good, though it was a little dry. I would recommend lowering the temperature to 350 or 375 and cooking for slightly longer. It was worth the time (which was minimal) and I would definitely make it again - though the apartment did smell like curry for a week afterward!

Simply Lemon Baked Chicken

EXTREMELY easy. Completely delicious. I was a little concerned about the amount of salt, so I added slightly less. Chicken was very moist and delicious. I will definitely be making it again!
