Pumpkin Pancakes
I took this as a starting point, but changed it a bit with awesome results. Mixed 2 cups flour, 1.5 tsp baking soda, 1.5 tsp baking powder, 1/2 tsp salt. In a separate bowl, mashed with fork 1.5 cups freshly baked pumpkin (baked at 375F x 1 hr, cooled). Added 1 egg, mashed, added about 1 Tbs coconut oil, mashed. Half cup at a time, added 1.5 cups whey from home-made ricotta (so easy! - look it up). Mixed well (beat with fork). Added to dry stuff and mixed with wisk. This came out way thick for pancakes, so I added probably another cup of whey. Fried on low-medium 4 at a time 3-4 " pancakes. Kids ate 'til they could eat no more. Yum! Thanks for the inspiration!
