Baked Kale Chips

Always wanted to make my own kale chips and finally had the chance to. Very simple and healthy alternative to chips, this is my go to snack when I want that crunchy/salty taste (besides roasted seaweed). I have an electric stove, so 10 minutes was a little too long and burned a few chips slightly. But still totally edible.

Lebanese Lemon Salad Dressing

Such a simple and refreshing dressing! Why didn't I think of it myself?? I would cut back on the lemon next time though...too acidic for me that I had to whisk in more EVOO. But I'll make it again and enjoy it!

PHILADELPHIA Marble Brownies

I had some unopened cream cheese leftover from an aborted attempted to make cheesecake; I needed to use it before expiration and this was the easiest thing I could find. Very simple and a great way to dress up regular box brownies. I've swirled cream cheese brownies before, but this time around it didn't swirl quite right...I think I'll try another reviewers suggestion and layer the brownie mix w/ the cream cheese next time.

Sugarless Bars

These aren't bad at all! I have a diabetic neighbor I wanted to bake for and these tasted great even to me! I used dried apricots and green apples instead of dates and prunes. And since dried fruits aren't sugarless, I rinsed them thoroughly first (trying to get rid of some of the sugary syrup coating). I also only used 1/4 cup margarine and pecans instead of walnuts. They're not a bad snack if you don't mind a little less sweetness...I would probably drizzle a little cream cheese frosting on them next time for the sugar-eaters.

Marbled Pumpkin Cheesecake

This pumpkin cheesecake came out great! I didn't have gingersnaps or pecans for the crust so I used graham crackers and walnuts instead. The pumpkin flavoring is very subtle, but still really good. I also used a little less sugar.

Best Big, Fat, Chewy Chocolate Chip Cookie

Great cookies! I found that baking for 15 minutes was too much though. By the time the edges start to brown, the cookie bottoms become too hard! I baked at 3pm and by 8pm, they were like rocks. I made some changes: I decided to add a little cinnamon. And I divided the cookie dough up into three batches: one was chocolate chip, one for Andes mints, and one for chocolate chip and walnuts. Yum!

Downeast Maine Pumpkin Bread

This is a great and simple recipe. I agree w/ others that the pumpkin flavor and spice is subtle, I wanted more of a kick, but it's still good bread. I added a bit more cinnamon and nutmeg and a shot of vanilla. I had enough for a 8x4 loaf pan and 1 muffin tray. The loaf baked for 1.25 hours while the muffin tray baked for 25 minutes. I'll be making this again.

Cream Cheese Frosting II

I'm a newbie to cooking and baking so I wanted something easy after my attempt at Italian Buttercream failed miserably. This recipe is simple and GOOD! I let the cream cheese and sliced-up butter sit on the counter for about 1 hour only. Then I partially creamed them using a hand-mixer. I ended up halving the amount of sugar b/c I didn't want it too sweet. Once all the ingredients were added, then I really whipped the frosting. It came out tasting like cheese cake and w/ great texture (not runny) so I'm a happy camper!
