The Best Thai Coconut Soup
Pretty tasty. I let it cook on the stove a little too long and the coconut milk almost started to curdle, so watch out. I added green peppers and red onions. I think I'll substitute sweet white onions for the red next time. Definitely added more red curry paste than the recipe called for. Will make again!

California Bean Dip
Delicious! I followed the advice of one reviewer and decreased both dressings- 1/4 cup Italian and 1/2 cup Ranch. It turned out wonderfully without an overall strong Ranch taste. I also added an avocado and a red pepper. This was eaten up quickly at a little party and my friends just raved about it. They were trying to guess the ingredient that made it kinda creamy. When all flavors mingle together, it is awesome! Will definitely make again!

Jamie's Cranberry Spinach Salad
I think the dressing made this salad! It looks so pretty in a glass dressing bottle because the oils and seeds all separate. I brought this salad to a dinner party and everyone loved it. Next time, I might add more to bulk the salad up though, like red onion and cucumber?
