Mexican Casserole
Absolutely delicious!! Genious, really. The beans and the soup really marry all the flavors and give it all a very hearty and substantial texture. Had company over and they all were amazed at how good it was. Changes I made, as per suggestions, were: used green chili diced tomatos, used refried beans instead of ranch-style, sauteed a bit of garlic and one onion after draining the meat. SO SO GOOD!!! MAKE THIS!

Baked Spaghetti
I've been trying to make baked spaghetti for years, but it always ends up tasting like pasta with sauce and cheese melted on top. Not this recipe! I'm so glad I found it. The only changes I made were I left out the meat and, instead put a layer of spinach on top of the ricotta layer, followed by the mozzarella. I also mixed minced fresh garlic in with the pasta and butter to give it all more flavor. I will make this at least once a month!!

Tomato Dill Soup
I found this recipe a couple weeks ago and I've already made it twice. It is amazingly good. There is a restaurant in town here that serves tomato dill soup that everyone raves about....well, this recipe is better. It's also a very inexpensive and satisfying meal with some fresh bread or a bagel. I leave the bay leaf out because, to me, it overpowers the dill and garlic flavors. Oh, and I double the garlic, and instead of the full can of chicken broth, I do a half can and a half can of whole milk...............CAN'T SAY ENOUGH ABOUT THIS RECIPE!!!
