About this Cook
I am a registered nurse and work full time. I also have two teenaged boys and a 2 year old daughter so I don't have a lot of time to cook. When I do cook at home, I always try to cut down on fat and sugar and make healthier versions of recipes.
My favorite things to cook
I make a mean chili and really good lasagna.
My favorite family cooking traditions
Every year I get together with my Mom, sister, and aunts and make Christmas cookies. We us many old recipes from my Great Grandmother. For one recipe, we use two hand-forged cookie molds made by my Great Grandfather.

Easy, Sweet Cornbread Muffins
I've made the Jiffy cornbread muffins per box instructions and they were dry and bland. This recipe tastes really good; moist and sweet. I did not add sugar, just honey.

Blueberry Cream Muffins
I made this recipe last night and my family of 5 (including 2 teenaged boys) ate 20 muffins in 18 hours! They were delicious! The modifications I made to the original recipe: Used 2 C light ricotta cheese instead of sour cream (that's all I had at home), used 1 1/2 C sugar instead of 2, used 2 TBSP lemon juice (to thin the batter a bit), used about 2 1/2 C fresh blueberries, used 3/4 C applesauce and 1/4 C light olive oil instead of the vegetable oil. They looked and tasted great! Will definitely make these again!

Best Ever Caramel Apple Crisp
I made a lower fat and sugar version of this and it was delicious. I used 2 Tbsp sugar in the apple mix and 1/2 Cup brown sugar and butter in the crumble. I used 1/4 cup skim milk in place of the evaporated milk. I served the caramel sauce and whipped cream on the side for those that wanted it.
