Banana-Zucchini Bread

Great base recipe. It has a good texture and I really liked the cranberries. My minor substitutions: replaced about half the oil with applesauce, about 1 cup of all-purpose with spelt flour, increased zucchini. Thanks!

Date Flecked Orange Muffins

What a fun twist! I loved blending up the wet ingredients with my immersion blender. I followed this recipe closely, only replacing a small portion of the flour with whole wheat. Still, I had to decrease the temp to 375F half way through and still had some blackened bottoms. The spices were fine.

Peanut Butter Chocolate Chip Zucchini Muffins

My husband and youngest son couldn't get enough of these cake like muffins. While the batter didn't taste great, they baked up well. I didn't have garam masala, so I approximated a spice mixture of: 2 parts ginger, 1 pt cinnamon, 2 pts black pepper, 3 pts ground cumin, 3 pts ground coriander, 1/2 pts ground nutmeg, & 1 pt ground cloves.

Chocolate Mice

WOW! These were so much fun. Admittedly, I thought the sour cream a strange ingredient, but these were just right - not too sweet. Everyone commented on the 'fur'. The young boys also enjoyed eating them by dangling them above their heads by the tail.

Grandma's Leftover Turkey Pot Pie

Great recipe, thanks! My husband and 2 boys loved it (and that's saying something these days). I made my own crusts with this recipe. They were VERY light and flaky, and wonderfully thick. My only changes to the crust recipe... substituted a couple tbsp butter when I ran out of shortening AND substituted 1 tbsp white vinegar for part of the chilled water (my grandma's trick for flaky crust). I also baked it at 450F for the first 10-15 minutes to brown the crust. Perfect! The filling was tasty and very easy with frozen veggies and canned soup. Thanks for a yummy farewell to the Christmas bird!

Baked Kale Chips

These were yummy and very easy. My only concern is the use of olive oil at high heat as this oil has a low smoke point and could create unhealthy compounds if cooked too hot or too long. I'm wondering if this might account for the smell another reviewer referred to. I baked mine as low as 325F and still had the last batch smoking. Maybe canola oil would work?

Carrot Oatmeal Muffins

What a great recipe! I cut both sugars to a 1/2 cup each, substituted 3/4 cup apple sauce + 1/4 cup oil for the 1 cup oil recommended. They aren't oily at all this way! I have doubled and quadrupled the recipe so I could put a couple dozen muffins in the freezer before and since my son was born. They freeze great! The muffins I've kept out have been moist and delicious. Everyone asks for this recipe. Enjoy!

Rhubarb Stir Cake

I've made this recipe several times and always go looking for it when those big green leaves appear! I like this more as a snackin' cake than a true dessert, but I also cut back on the sugar both in the cake and on the topping. An excellent coffee treat!

Chicken Tortilla Soup V

Butternut Squash Soup

At long last! I've been looking for a great squash soup recipe and this is what I've been searching for. As others have mentioned, definately cut back on the cream cheese. I used a single block and still found this to be a VERY thick soup. I will start with a half block next time and add more, as desired, while blending. Great flavours!

White Wine Broccoli Casserole

A really good recipe. I added about 3/4 cup of dried onions to the white wine sauce for extra favour. I served this with dinner rolls and white wine and it went over very well. Plenty of flavour and very filling.

Pork Roast with Thyme

Delicious recipe! I cooked this in my crockpot and used the same basic ingredients. I substituted tarragon vinegar for apple cider and added 1-2 sliced apples to the crock for the last hour or so. I served the apples over the pork. A new favourite!

Rhubarb Cheesecake

What a great change from the everyday cheesecake. The rhubarb gave this cake a great, unique, tangy flavour. The crust was wonderfully different... like shortbread. I'll definately make this again.

Tzatziki I

A really tasty recipe. It took a while to get the yogurt & cucumber thoroughly drained, but the result was well worth it. The garlic made it really zippy. I thought less might be better, but I was told that it was great just as it is.
