Downeast Maine Pumpkin Bread

I always like to rate a recipe as written and this is very good. I have made it several times since with a few tweeks, sometimes I do half brown and white sugar, and/or half apple sauce and oil, add a tsp of vanilla, increase spices etc..... Either way, this is a great as is or great with a few revisions, hard to go wrong. It is better after a day or two if you can wait.

Creamy Chocolate Frosting

Simply good recipe. I did use half and half since that's what I had. I wanted to pipe on cake and this was easy to adjust the consistency for decorating. I did triple the recipe to make sure I had enough for filling frosting and decorating and 9in double layer cake. Used on Black Magic cake from this site. Everyone loved it.

Black Magic Cake

I made this recently for a birthday. I don't like using boxed mixes and this one is quick and easy. It came out dark and moist. I had no problems with removing from pans or handling. Got rave reviews.

Sam's Famous Carrot Cake

I have had this recipe in my box for sometime and decided to make it for a B.D. Well, I got distracted and over baked it, my bad. Even though it was a little dry I could tell the flavor was good and it was still a hit with everybody. I will make again, and definitely make a day ahead of time to let the flavors develop.

Salsa Chicken Rice Casserole

I decided to make this for my Bro-in-laws B.D. I was distracted the entire day, overcooked the rice etc....So I ended up just mixing everything together and topped it with the cheese. Everybody gave it thumbs up. I don't like to change recipes and then review them but I basically used all the main ingredients and it turned out fine, so I guess the moral of the story is this one is really hard to screw up.

Green Beans with Cherry Tomatoes

Love this recipe and it got rave reviews from dinner guests. I have been looking for a simple yet tasty and pretty veggie dish that didn't require soup mix. I used frozen beans and steamed instead of boiling and I did skip the sugar although I might try it next time. I also look forward to trying variations like garlic, pine nuts or shallots etc..

Tiramisu Layer Cake

Made this (as written) for a birthday party, and everyone raved. The only thing different I will do next time is use instant espresso powder instead of instant coffee and for the frosting I'm going to sub brown sugar for the powder sugar which is what I have used on other cakes. I will also try others suggestion and make 2 coffee layers. Still is great as is.

Amazingly Good Eggnog

Really great eggnog, i liked the fact that the base is cooked. I made it according to the recipe and after letting it chill for 24 hours, we felt it needed a bit more of a kick so I did add 1 cup of brandy and 1 cup of VO(canadian whiskey). Big hit I will be my annual eggnog recipe.

Grandma Ople's Apple Pie

I don't care for making pies in general and apple pie is my least favorite,but I felt obligated to make one for thanksgiving so I tried this recipe. This is the best apple pie I have made or tasted. I don't like to review recipes to which I have made major changes having said that the only thing I couldn't resist was tossing the apples with some cinnamon before placing in the crust. I also hate making pie crust and used pillsbury ready made. It not only tasted wonderful but looked beautiful, and got thumbs up from everyone. This is the only recipe I will use for apple pie from now on. Thanks for a great recipe

Thanksgiving Cheese Ball

Great cheese ball. I made the recipe as is and everyone liked it. I did let it chill before rolling in nuts, (I did use walnuts) and it turned out perfect. I much fresher taste that store bought cheese balls.

King Crab Appetizers

Great appetizer. I doubled the recipe for 2 super bowl parties and they were a hit. I couldn't find the mini phyllo cups so I used the biscuit dough and they were fine, I might experiment with something different next time. The filling was also good as is as a spread on crackers. I will be making this again.

Buffalo Chicken Dip

This was a big hit. I omitted the cheese, otherwise made it as written. Next time I will try it with bleu cheese dressing. The biggest complaint was that it was almost too rich.

Coconut Cream Pie

Great Pie! I don't think it is fair to rate a recipe after making alot of changes to it. Having said that, I did use a graham cracker crust and sprinkled the top with toasted coconut, otherwise I made the filling as written. The result was a simply wonderful old fashioned custard pie. I didn't think it was difficult or time consuming and the texture was perfect. Everyone loved it.

Pecan Pie V

I usually don't make pecan pie but I had to try this one and I loved it. I think it has a better flavor and texture than the corn syrup variety. One reviewer mentioned a grainy texture so I made sure it was well mixed and that was not a problem. As another reviewer mentioned I also added nuts to the top for presentation. It came out wonderful. Great recipe

Simply Parmesan Chicken

Love this recipe. I do alot of "oven fried" chicken but this was different. I used freshly grated parmesania reggianna, Italian bread crumbs, using a slightly more cheese to crumb ratio with 2tsp. oregano and a little salt. The result was moist, tender and wonderfully flavored chicken, that was easy to prepare.

Spicy Chicken Breasts

We really liked this rub.The only thing I did different was for the ones I knew wouldn't like it that spicy I simply mixed some of the rub with bread crumbs. I dipped the chicken in an egg wash then the seasoned crumbs. For the rest I used it straight I also wasn't grilling so I "oven fried" it. Worked great. Can't wait for summer grilling season.

My Mom's Sausage and Rice Casserole

This recipe surprised me it was better than I thought it would be, and everyone else liked it also. The only thing I would do different next time is add some extra broth and a full cup of rice. I would also mix some almonds in addition to the topping and maybe try a spicier sausage.
