Spinach and Tortellini Salad

Took this recipe to dinner with friends and it was a hit!! Used the Italian Dressing Mix Recipe from this sight, made with olive oil, white wine vinegar and a splash of lemon juice, as the Italian Dressing and it was fantastic!!!

Beef and Irish Stout Stew

This is an excellent recipe!! I've made it a couple of times and my family LOVES it. In stead of simmering it on the stove for a couple of hours I dump it into the crockpot and set it to low. Then I don't have to do anything until we're ready to eat!!

Cheesiest Potato Soup

This recipe was Fantastic!!!! I only made 2 minor adjustments I started by cooking some cut up bacon then added the butter and onion to the pan and continued according to the directions. I also used half & half because I had it on hand. I blended the whole thing because that's how I like it. It was was thick and luxurious. We will be eating this all winter long!!!!

Bourbon Whiskey BBQ Sauce

I just made this this afternoon and it is wonderful!! I have it in the fridge now and I can't wait to see how in tastes in a couple of days. I used Jack Daniels (I had some on hand and I don't actually drink it) and a sweet onion but other wise followed the directions as written. I read the reviews where people said the onion and garlic were hard to strain out of the sauce but I wanted to get plenty of flavor so I cut both my onions and garlic to a small dice. When I was ready to strain it out I put a mesh colander over a bowl and pushed the sauce around with plastic spatular. This easily separated the sauce from the onion mix. I also put the onion mix aside to I can used them when I make pulled pork.

Cajun Pasta Fresca

Made this according to the directions except substituted dry parsley for the fresh. I think fresh would have given it more brightness and I look forward to making it that way. Even with the substitution my son was asking me to make it again before we were even done. **update** I Did make this recipe with fresh parsley and it was worthy of 5 stars. However I'm personally not a big fan of parsely so tonight I made it with cilantro and it was off the charts FANTASTIC! Using the cillantro is a personal preference and the recipe is wonderful as written. I will make this again and again!!!

Orange Pecan French Toast

Made this according to the directions and absolutely loved it!!!!! My family thought this was absolutely amazing!! We plan to make it for Christmas and Thanksgiving breakfasts from now on. Then for some other occasions throughout the year.

Ham and Pea Salad

I made this salad without any changes, although I eyeballed the cheese and onion. It was excellent!!! Three of us finished the whole bowl. For the ranch dressing I used Hidden Valley made from the packet. It was great for this recipe because it's creamier than the bottled stuff.

Grilled Corn Salad

I was looking for a way to use up some frozen cobbettes and this seemed like a good way. Actually it turned out absolutely fantastic. Aside from using the cobbettes (which we did grill) the only adjustments I made were to add a splash of lime juice as others suggested and to use more tomato. We absolutely loved it!!!! We can't wait to try it with fresh corn and see if it can actually get better!!!

Hudson's Baked Tilapia with Dill Sauce

My whole family loved this!!! The only minor changes I made where extra dill and lemon in the sauce; and a few small pats of butter around the fish. We can't wait to buy more tilapia and make it again!!!!

Granny Smith Apple Squares

I made these for a get together with my friends yesterday and they were fantastic!!! I didn't use nut because I didn't have any so I up the amount to about a cup (1 large granny smith). Once we tasted them we decide we would continue making them without the nuts. I also used an 8.5 X 11 pan because that's what I had. I know some of the other reviews said the cinnamon sugar feel of the top of the bars. I avoided this by just gently patting the topping into the top of the bars before baking. I didn't reduce the topping amounts because we love cinnamon!! I will make these again and again!! Thank you for the wonderful recipe!!

Mouth-Watering Stuffed Mushrooms

These were a Big hit at poker night!!! They were gone in no time!!! I made them according to the directions and then sprinkled a Italian bread drums on top of each on. I had extra filling after the mushrooms were filled and it made an Excellent spread on Ritz Crackers. If you are having trouble mixing the ingredients with the cream cheese a hand blend works wonderfully!!!

Awesome Slow Cooker Pot Roast

Original this was a Betty Crocker Recipe intended to be made in the oven but it translates amazingly well for the crook pot. I've made it both ways many many times. I never sear it as some people suggested but I cook it a little long on high until it's almost ready to fall apart. Because it sits in its own gray it is never dry. If a lot of your roast sticks out of the gravy you can flip it over. We love mushrooms in the gravy so when I have a can I add them. Also Crockpot liners from Reynolds are an amazing and inexpensive time saver!!

Bonnie's Jambalaya

I have made this twice and my family absolutely loves it. Next time I will do as some other people suggested and make the rice ahead. Also my this has really great flavor but isn't very spicy so for my heat lovers I added 1 TBSP of Original Tabasco.

Honeyed Pork Chops

When I made this I didn't have very good quality pork chops so even though I adjusted the cooking time they turned out tough. However the sauce was ABSOLUTELY AMAZING!! I can't wait to try it with better chops and maybe even chicken!!
