I had a couple of boxes of Jiffy Apple Cinnamon Muffin Mix in my pantry (okay the pantry is a converted coat closet but it works) and we had them before so I know they're good. However I woke up this morning, apparently hungry, and thinking about apple muffins that we used to get at Costco.  They had an oatmeal crumb bottom that made them really good. So stayed in bed for a little bit thinking about how to use the Jiffy Mix to make something more like the Costco muffins.

With Muffins still on my mind and no hope of going to back to sleep I got up and headed for the kitchen. I made a set of Special Apple Cinnamon Muffins and they were awesome! Now it is not uncommon to have glitches the first time out trying to create a new recipe and this recipe had one. When the muffins are done they have caramel like bottom and even though I sprayed the muffin pan very liberally with cooking spray they still stuck. Next time I'll use muffin cups. I know I have some around here somewhere (probably in the pantry) but if anyone has another idea PLEASE post a comment. 

In spite of the sticking issue I will definitely make these again. Here's what I did: 

Special Apple Cinnamon Muffins

1 box Jiffy Apple Cinnamon Muffin Mix
1 Egg
1/4 cup Milk

1/4 cup Instant Oatmeal
1/4 cup Brown sugar
2 TBSP Butter or Margarine (soft)

6 Muffin Cups

Preheat oven to 400 degrees.

In a small bowl combine muffin mix, egg, and milk according to package directions.

In a second small bowl mix together oatmeal and brown sugar, then with a fork mask butter into the mixture until it is completely combined.

Place muffin cups into muffin pan, then add 1 TBSP of muffin mix to each cup, next top each cup with 2 tsp of oatmeal mixture, finally divide remaining muffin mix evenly into each cup (about 2 TBSP each)

Cook according to Jiffy box directions.

***This makes 6 standard size muffins. Adjustment will be needed for extra large or mini muffins.

I use a silicone muffin baking pan when baking sticky muffins... they come out of the pan perfect. pls give this a try next time you bake these muffins.

Could you have just sprinkled the contents of one of the AF packets of maple oatmeal on top of the prepared batter, and not add the additional butter, which I believe to have made the sticky caramel you describe

@Kim thanks for the suggestion I might give that a try! @CTMomto4 that would probably work but the caramel bottoms are very tasty if you can get them out of the pan.
