Tartar Sauce I

I made this for the first time today and absolutely loved it! I find that store-bought tartar sauce is too sweet so I wanted to try making my own. This is quick & easy to put together. I used about half the amount of lemon juice and thought it was perfect. You could add more relish if it needs to be sweeter. I wasn't sure about the onion but I added it anyhow since I like onion....and I'm glad I did because it really adds to the flavor. I only used a small amount of salt & no pepper. I agree with other reviewers when I say that I probably won't get store-bought sauce again.

Creamy Chipotle Chicken

I've been making this for awhile now and finally got around to writing a review. I cook this in a large skillet, not a slow cooker. I chop up the chicken and saute it before adding the other ingredients. I cook it over low/medium heat for a bit (I've never really timed it) so the chicken is tender. The last time I made it I felt it needed something else so I put in sliced red pepper. We eat it over rice. It was awesome and the hubby loved it too!

Breakfast Sausage Casserole

I made this for Christmas breakfast today and the family loved it. I used 3 croissants (the size you use for sandwiches) that had been in the freezer and they worked perfectly. I always freeze leftover french bread, etc to use in dishes like this. I only used half the amount of cheese. Four cups seemed like a lot. I added 1 more egg and a little more milk to the mushroom soup. This is a very versatile could use bacon or ham, add onions, green peppers, etc. Definately a keeper!

Seafood Enchiladas

Wow!! This recipe is a keeper. My husband who generally isn't a big fan of cream-based sauces ate 2 helpings. As others suggested, I made a few additions to the sauce. I used heavy cream and a little milk (because I didn't think there would be enough, there was). I added a small can of chopped green chiles, cumin, cilantro & powdered cayenne pepper. I also added a few spoonfuls of the sauce to the seafood mix. I think it made it easier to work with when filling the tortillas. I used corn tortillas and served it with guacamole and cilantro/lime rice.
