Tres Leches (Milk Cake)

Made this for my boyfriend's birthday. I added a few drops coconut extract. I also followed the advice of other reviewers and beat the egg whites separately before adding them to the batter (sugar, butter, flour mixture, and egg yolks). I baked in a smaller pan--8 x 11.5 I think. WHEN I make this again, I think I'll cut back a bit on the sugar (maybe cut 1/2 from the whipped cream to start.) Otherwise, this got rave reviews from my boyfriend and his entire family.

Artichoke Tetrazzini

For as much fat (cheese, 1/2 and 1/2, butter) as this recipe has in it, I thought it would be a lot creamier. The taste was good, but I thought it was too soupy. If I make it again, I will cut back significantly on all the liquids. I'll reserve the cheese, toss the sauce with the noodles, put them in a casserole dish, top with the cheese and bake until it's melty and the liquid has thickened.

Spanish Moroccan Fish

I will definitely make this recipe again. It reminded me a lot of my hostmom's cooking when I lived in Spain. I used sole instead of tilapia, and omitted the olives and parsley just because of what I had on hand. I think I also used a bit less cumin. It was an easy and delicious dish. I served it over couscous, but rice would work as well. Thanks for sharing!

Chicken Pot Pie II

Yummy, yummy! I wanted to prepare some meals that freeze well (finals are coming soon!) and thought this looked like a winner. I almost never cook meat, but I thought this recipe was very easy. Only variations: I added a few good shakes of dried thyme, and I only used two lg. potatoes. I split the filling into two regular (not deep dish) pie plates and topped with a frozen whole wheat crusts. I divided the two pies into 8 portions, of which I froze six. This is tasty, healthy, budget-friendly comfort food. What else could you ask for?
