Spicy Sweet Potato Salad
I thought this recipe was wonderful and truly unique. I rarely give 5 stars, but really felt this recipe was worthy. I used veganaise (instead of regular mayo) and omitted the jalapeno pepper - it was still spicy enough for me. I would suggest you start with half the amount of curry powder and add more to taste. I put the full amount in and felt it was just a tad too strong. It still tasted great, but next time I'm going to try it this way aiming for the "what's in there?" mystery level of curry rather than "wow that curry tastes good". I also substituted 1/2 of the red potatos for blue ones. This made for a very colorful dish.

Red, White and Blue Strawberry Shortcake
This is a fun and festive dessert that is easy to make. I ended up only needing about half of the fruit called for. Because my strawberries were so big, I needed to slice the strawberries thinner (in half and then in thirds) to be able to make 6 red stripes. If you have to slice the strawberries more than just in half, it helps to slice off some of the inside flesh. This helps the strawberries to lie flat so that only the outer red skin shows hiding the paler fleshy part. Nothing terribly unique about the taste, but still yummy enough and very patriotic. Kids loved it and can help in the decorating process.

Apple Oatmeal Cookies II
These make great snacks for kids... wholesome ingredients and NO refined sugars. I added 1 large ripe mashed banana into the wet ingredients to increase sweetness. I also used applesauce instead of chopped apples because my boys still have problems eating things with lots of texture. I also would recommend increasing the cinnamon to one full teaspoon. Making them this way, I came out with slightly less than 4 dozen, and the cookies were somewhat cakelike. They were yummy and my toddlers ate them up!
