West African Peanut Stew
Really wonderful and unique recipe! I'm a calorie counter, so I had to lower the cals/serving to fit this into my daily intake budget. So....I only used about 2/3 cup peanutbutter. I also didn't put in the greens due to personal preference, and I didn't add chicken out of sheer laziness (would've had to thaw it). I think 1 tbs was too much crushed red pepper, but this is up to the individual, so I recommend you start with less and work your way hotter to get it right. Also, I used an immersion blender and preferred this consistency because the potatoes ended up too mushy for my liking after 35 min of boiling/simmering. Anyway, fabulous - thanks for sharing!

Cucumber and Dill Finger Sandwiches
Fabulous! I was looking for a light lunch today, and I found this to be extremely refreshing! The flavors blend together very well, and it's unique compared to the usual sandwich fare. I had to change a few things based on what I had on hand. I used honey whole wheat, which was good, but I'm betting sour dough would've been a knockout. I used a regular onion rather than a shallot, and I had to use dried dill instead of fresh. I scaled down the recipe using only about 3/4 of a log of goat cheese and 1.5 tsp of dried dill, if anyone is curious. Great recipe! Thanks for sharing.

Coconut Chicken
WONDERFUL! I wanted a chicken recipe that was a little off the beaten path, and this was just the ticket. I made it nearly exactly as stated except for my use of full fat mayo instead of low fat :), and I pan fried them in coconut oil rather than baking them. The result was fantastic. The breading stayed attached just fine, the flavors balanced wonderfully, and the coconut was apparent without being overwhelming. The sauce was great too. I didn't really know what to expect with a mayo and coconut topping, but drizzling that on top was quite flavor enhancing. I added about a tsp of brown sugar to it for a bit more sweetness. I recommend that if you are into that kind of thing. Overall - fabulous recipe!
