Iowa Enchiladas
I never rate a recipe without trying it first, but I'm making an exception because one of my friends makes a casserole exactly like this and it's delicious. In fact, I found this recipe while searching by ingredients because I lost the recipe my friend gave me. It's not gourmet by any stretch, and I usually avoid processed foods like canned soup, but this is good, easy comfort food for a crowd. Just don't expect it to taste like Mexican enchiladas; different thing altogether. The only thing my friend does differently is mixing in some of the sauce with the ground beef filling & adding a little cheese on the inside as well. I add jalepenos, but that's my thing. I think you'll like it if you try it.

Sri Lanka Beef Curry
I feel a little funny reviewing when I didn't follow the recipe exactly because I hate it when people leave glowing reviews but didn't actually make the recipe. That said, I was just making due with what I had on hand; thought I'd share so others won't be afraid to try. I didn't have pandan and I forgot the vinegar and I used ground cinnamon and cloves and used my own family's garam masala mix and finished with chopped cilantro. Also omitted the coconut milk just to reduce the calories. I made this in my pressure cooker, which worked out well for a weeknight meal, and served with brown rice. I'm Indian, but beef curry is new territory since my extended family is Hindu. This was great!

Salmon Cheese Ball
This wasn't as good as I was hoping, but I think the result was my fault, not the recipe's. I mixed everything in the food processor (doubled the recipe and used 12 oz canned pink salmon + 3 oz smoked salmon). I think the texture was just too smooth, and I couldn't get it to roll into a ball. After a day, I added some whole capers, minced red onion and parsley, which improved it greatly. I'll give this another try and play with it a little. Definitely worth revisiting.
