Ranch Dressing II

Took Christy's advice with the spices but didn't add any buttermilk not oil as i wanted it to be more of a ranch dip vs. dressing. also, substituted miracle whip for the mayo and used fresh chives. turned out amazing! took it to a potluck and was being asked left and right for the recipe. THANKS!!

Classic Macaroni Salad

was pretty good. reminded my family of the taste of potato salad. did end up adding frozen peas and shredded colby jack. used both shredded white onion and thinly sliced green onions. will omit the celery or have it sliced super thin next time as i didn't like the flavor that much. will definitely make again but will keep working with the ingredients ... roasted red peppers are going in next time :)

Cheesecake Lemon Bars

i would happily give this dish 100 stars as it was absolutely wonderful! i did increase the lemon juice to 2/3 as suggested and added an additional 1 tbsp flour to the lemon juice mixture. afterward it cooled, i topped it with one cup of sour cream along with approx. 1/4 cup powdered sugar. turned out sooooo good. however, PLEASE (unless you really like the tart taste of lemon) wait for at least 6 hours before you eat it. this allows the flavors to really infuse and work their "magic" on this dessert.

Best Tuna Casserole

this was the best tuna casserole i have ever eaten let alone made. i made the substitutions which were suggested and a couple of my own. since i am overseas, i had to make my own condensed cream of mushroom soup which i found online. made a triple batch of cream of mushroom soup using 2 big cans of mushrooms. substitututed 2 med roasted red peppers and .5 canned corn for peas. added 2/3 c. sour cream, spiral noodles instead of egg noodles, colby jack, cayenne, crushed garlic, salt, pepper, and extra whole milk. my husband who is "not a tuna guy" called it "fanastic" and the whole dish was scraped clean. by the way, this was just the right amount for a hungry family of 5 adults and 1 preteen.

Banana Crumb Muffins

added 1 tsp vanilla and 1 tsp cinnamon as suggested but otherwise kept everything else the same (assumed 3 med-big super ripe to over ripe bananas/recipe). everyone loved them. quite possibly the best cupcakes that i have ever produced. thanx!

Banana Banana Bread

awesome! best banana bread that i ever made. made as muffins and followed the suggestion to add a tsp water to top of muffin along with a nice sprinkle of brown sugar...kids and hubby loved it.
