Carrot Pineapple Cupcakes
After reading some of the reviews, I felt compelled to make some additions to the recipe. I followed the recipe as is, but added 1/2 tsp of ginger, allspice and nutmeg each. Came out very flavorful, fluffy, and light. Loved them. Made samples to take to work with me. These just might be the cupcakes for Easter we've been looking for!!! Thanks urbansunshine!!

Roasted Turkey Legs
I revised this recipe a little because I was out of an ingredient. instead of celery, I pressed large pieces of white sweet onions into each turkey leg. Then instead of salt, I used the "dry rub for all occasions" (see recipe - and instead of water I used chicken broth. The meat was tender and juicy, the outside was browned really well and the taste was OMG!!! My sons (who are my biggest critics) loved them. Will be using this recipe over and over.

Fluffy Whole Wheat Biscuits
I used Pinerygirl's suggestion and substituted honey for sugar. came out tasting kinda bland but still very good. spread honey butter on the tops and that boosted the taste. Biscuits came out fluffy and light.
