Firecracker Grilled Alaska Salmon

Angel's Yummy Bruschetta

I used 5 plum tomatoes, about 1/4 red onion, 1/2 tsp dry basil, 1/2 tsp minced fresh garlic, a dash of oregano, and topped finished brushetta with feta cheese crumbles. Original recipe has too much onion for our taste.

Bruschetta I

I use less onion add minced garlic to the bruschetta instead of rubbing it on the bread. Using dried basil works fine. I always add some salt to taste. For an extra treat, serve on top of homemade garlic bread or top with a little feta cheese or mozerella. Mmmmm....

Alaskan Salmon Chowder

I didn't have any potatoes handy so I put in mashed potato flakes at the end of cooking...it worked well. I opted for celery salt since I had no celery on hand, either. Not bad!

Pan Seared Red Snapper

This was very good and worthy of making again. The lemon sauce was very tangy. Salt and pepper needs to be added to taste, and perhaps a little cayenne or cajun spice might go well.

Banana Pudding Cake

This is the recipe I was looking for, not for banana cake but for zucchini cake! Use a package of lemon or vanilla pudding and add 2 cups of shredded zucchini, 1/2 to 1 tsp cinnamon, and a dash of vanilla if you wish. I also used applesauce instead of the oil and used 4 egg whites and 2 eggs instead of four whole eggs to cut down on fat. Very moist, and very delicious!

Veggie Burgers

I tried putting the oatmeal in the blender first to give it a smoother texture. Added soy sauce, a boullion cube, and some fresh parmesan as well as some italian seasoning and celery salt. Flavor was good but the mix really needed to lose more moisture before cooking.

Acapulco Chicken

I added zing to this recipe by changing it up a bit. I didn't add more chili powder after cooking the chicken. After cooking the onion and bell pepper with 1-2 tsp diced garlic and 1 tsp ground ginger, I added 2 chopped roma tomatoes, 1/2 cup medium salsa, 1/2 cup water, a sprinkle or two of cinnamon (you'll be surprised how a little adds a lot of flavor!), salt, pepper, and added 1/8 cup finely chopped canned jalepeno slices. I then added the spiced chicken and heated thoroughly, allowing the liquid to form a "sauce". After cooking, I removed from heat and stirred in 1/4 cup of freshly torn cilantro. Excellent!

Restaurant-Quality Baked Potato Soup

Good soup- I made it with 2% milk instead of half and half, and also did not have enough potatoes on hand. (Would have liked the soup a bit chunkier, although the thickness was terrific!) It is very close to the soup you get in restaurants...good job, and thank you!

Overnight Raisin Oatmeal Pancakes

I made it more fat-friendly and substituted apple butter for the oil- subbed real maple syrup for added sugar, also had no baking powder or baking salt on hand and it came out fine! Great served with sliced bananas and real maple syrup on top.

Baked Dijon Salmon

Salmon came out soooo tender and juicy! Flaked right off of the skin. The dijon flavor was light and mildly sweet- an excellent complement to the salmon. I skipped out on the pecans and made my own breadcrumbs seasoned with thyme, basil, and oregano. Topped with a sprinkle of salt and pepper and garnished with fresh cilantro and lemon...a masterpiece! Try drizzling a little of the extra dijon sauce on the plate for added effect. 5 stars!!!

Filet Mignon with Rich Balsamic Glaze

This meal made my New Year's! I had tender center Angus filets and used rich balsamic vinegar and our favorite Lambrusco. I added a touch of thyme and was rewarded with the juiciest melt-in-your mouth filets.

Chicken Enchilada Soup I

I didn't have the corn tortillas so the soup was much thinner than it should have been. Added some extra spices- cumin and chili powder to kick up the flavor. Fresh chopped green pepper, cheddar cheese, and tortilla chips were an excellent topping.

Chicken Tacos

Added some jalepeno, fresh onion, red and green peppers, and cilantro to the pan after chicken had simmered for a few minutes. It gave it some kick and a great cilantro flavor- even better the next day! If no sour cream is on hand cream cheese is just as tasty!
