Kathy's Award Winning Barbeque Sauce

looks beautiful, taste is good, but I would sub some honey for the molasses next time and cut down on the cayenne pepper. Very impressive looking. Sweet baby ray's is my favorite sauce, I think with some pineapple juice and the changes above this would be really close! thanks for the recipe. Very easy, always a plus!

Mexican Chicken Corn Chowder

Awesome!! I used stock made from leftover rotisserie chicken, picked the meat off of the bones, set aside. Then I cooked diced onion in some butter until translucent, added garlic, and 2 tablespoons flour to make a roux. I added my chicken stock and cumin, and brought it to a boil and simmered some water off of the stock. Then I added a can of creamed corn, corn from 2 leftover ears of corn on the cob, and the chicken and cumin. I did not add cream, tomato or hot sauce. Instead I put in nearly 8 oz of pepper jack cheese at the end, and stirred until melted. Yum! I did not need to add any boullion or additional salt, either. Very yummy for a cool fall day! thank you for this recipe.

Zucchini Bisque

I chopped my zucchini and used fresh basil as well. I used a whole medium one (probably 4 + cups of zucchini). Fill the pot up, it all cooks down and releases liquids anyway. I only used half the butter with the onions, and omitted the cream in the second batch. (doesn't seem to need extra fat, it's good as is) Also, I added some ground cayenne pepper and serve it over plain white rice. Great way to use up those plentiful zucchinis! I am making several batches and freezing them to enjoy later. Also good with croutons and parmesan cheese on top.

Awesome Slow Cooker Pot Roast

EASY! I wasn't sure about mixing in the mushroom soup (98% fat free), but it made a rich, dark brown gravy, and it needed no flour. I did add some wine to the the recipe, and skimmed lots of fat off of the top of the pot when it was done cooking (easily done as well.) Very surprised how tasty it was! I only used one can of soup and made a 3.5 lb chuck roast. Next time def. make a 5 lb one and 2 cans of soup!

Honey Wheat Bread I

I have never made bread before, and I was interrupted (had to leave earlier than expected for Thanksgiving dinner!) and let it sit on the stovetop rising for about 6 hours...then formed the loaves and let it rise again once back home. It came out great! I used butter instead of shortening, because that's what I had, and I forgot to add the evaporated milk before I added the yeast, but the recipe was indeed very forgiving. Yummy bread, can't wait until breakfast!

BBQ Cola Meatballs

Pumpkin Chocolate Chip Cookies I

I was going to make these myself but I went into labor, so I gave my mom the recipe and had her make them for me when I was at the hospital. OH MY GOODNESS these were so good!! Very light and cake-like. Even the nurses were eating them on me! My whole family loves them. We prefer them without the nuts and with extra chocolate chips. The best! UPDATE 8/8/2010 I add extra pumpkin to these= the whole can is fine, and they spread out beautifully. Also I use a whole bag of choc chips.

Apple Dumplings II

Yummy....I diced my apples and mixed the spices with them before placing in the dough, more like little turnovers. I also made a brown sugar/vanilla sauce using 1 c water, 1 c brown sugar, 1-2 tsps vanilla, and 3 tbsp butter. I simmered the sauce until it boiled down a bit to thicken, and ladled it over the hot dumplings before serving. Top with vanilla ice cream and voila! Note that dumplings are best when eaten straight from oven..they get a bit soggy if stored.

Butternut Squash Soup

yummy! Reminds me of the pumpkin soup I had in Australia. I used a whole butternut squash, an acorn squash, and some leftover canned pumpkin I had on hand. Only added 1/2 of one block of cream cheese...still very rich and smooth! Would be excellent served chicken enchilada soup-style- just add some cumin, cooked chicken, and top with cheddar cheese and tortilla chips. Mmmmm!!!

To Die For Blueberry Muffins

I used 1/2 oil and 1/2 applesauce, and also substituted 1/2 cup of oatmeal for 1/2 cup of the flour to add some fiber. Added some cinnamon to the mix, and would have added lemon rind or juice if I had it on hand...these came out great and the little ones loved the mini-muffins!

Creamy Rice Pudding

Very easy and creamy. Stirring in the egg works best in a single batch, but my double batch came out nicely as well. Great way to use up leftover chinese white rice. Added more sugar to suit my pop's tastes....the bowl was gone by morning!

Mandarin Orange Cake I

I would prefer the icing without the crushed pinapple, perhaps with just mandarin orange slices instead, because my cake was super moist and the icing was more like pudding. Still tasted very good, kind of like trifle and ambroisia. Didn't use any oil- substituted apple sauce for all of it. Yummy!

Thai Peanut Chicken

Excellent recipe! I doubled the sauce and added a rounded tablespoon of sugar to it to sweeten it up. I also used 1 tsp of powdered ginger instead of fresh. The sauce has a very strong flavor, so a little goes a long way over fluffy jasmine rice. MMMMmmm.

Beef Burgundy I

I used this recipe for venison loins instead of beef- it came out so tender and the gravy was very flavorful. I had a lot of extra liquid so I combined some flour paste into it to thicken it up a bit. I served it over rice, but instead I think this would have made great hot open faced sandwiches accompanied with mashed potatoes and peas. It tasted like a rich pot roast and gravy to me, but without all the fat from beef. Will make this again!

Hot Artichoke and Spinach Dip II

Excellent!! I used both reduced fat cream cheese and mayo, added an entire 10 oz box of chopped spinach, 3 cloves of diced fresh garlic, used 3/4 cup of an italian cheese blend, and halved the basil...it was INCREDIBLE. Great served with fresh diced roma tomatoes on top.

African Chicken Stew

Excellent! I halved the recipe. I used one stalk of celery, one carrot, 1/2 lg. onion, 1/2 cup chopped red pepper, one potato, and 1.5 lbs of chicken breast cut up. I halved the spices and it was spicy enough! Made 1/2 cup of homemade peanut butter and skipped the garbanzos altogether. Great over rice! I have been making this recipe for years now, just made it again 5/10/2010. Yum!

Banana Nut Muffins

We added a package of vanilla instant pudding mix and 1/2 cup applesauce and 1/4 cup milk to the batter for added moistness. Cut down the oil to 1 TBSP. Added 1/2 tsp ground cinnamon and 1/2 cup rolled oats. Also put in about 1 and 1/2 cups of mashed banana. Baked in our oven at 350 for 23 minutes. Delish! Would be great with mini chocolate chips!

This had a very strong taste to it and had a chewy crust. It was too heavy and not what I was looking for. I prefer a lighter, more cake-like texture.
