Kielbasa Stew

A big hit! Even with my non-cabbage fans. I basically made the recipe exactly as is but subbed turkey kielbasa and chicken broth for the red meat, used (Trader Joe's) roasted red pepper and tomato soup and forgot all about the sour cream (which would probably have only made it better)! A great recipe that is healthy, simple and yummy!

Mashed Potato Casserole

Pretty good but tasted surprsingly like basic mashed potatos even with everything added! It tasted almost better the next day microwaved for some reason. Somewhat boring but I will make again when I want a mashed potato casserole.

Baked Orange Roughy Italian-Style

I poured a puttanesca (roasted red pepper and nut) sauce over this and it was great. Haven't tried it without a sauce but this is a great base fish recipe to add a sauce to (my family doesn't like "unbreaded").

Peanut Butter Chip Cookies II

Great! I was out of baking soda and eggs but still wanted to make cookies for a chilly night. I replaced the shortening with butter (same quantity) and did not have chocolate chips even but this turned out great for peanut butter cookies! I also baked for 15 minutes.

Super Easy Chicken Noodle Soup

I threw in carrots, celery and onions. I used a combination of bouliioin cubes, chicken stock from the box and water and it tasted great. Tonight I am going to try throwing in matzo balls instead of the noodles.

Thai Chicken Balls

Yum! A quick, easy and different dinner dish. Served with white rice and a little soy sauce on the side. I did not find it flavorless at all. The cilnatro was fairly strong and my sweet chili sauce added heat. Adjustments: I used 2/3 lb. of gr. chicken, but kept the other measurements the same. Did not add gr. coriander but did add salt. For the last 5 minutes, I brushed a 1/2 sweet and sour/ 1/2 hoisin mixture on top. Also added great flavor. Also I baked these at 375 for 25 minutes.

Sweet and Sour Chicken I

Fabulous! I have tried almost every "sweet and sour" packet mix in the store and they're always horrible. This was exactly what I'd always been trying to achieve, and made with everything I already had in the kitchen.

Oatmeal Cranberry White Chocolate Chunk Cookies

This was very good. Crispier and lessy greasy than I expected. Good for anytime during the holiday season. I substituted dried fruit bits for the cranberries (the mix included cranberries) and chocolate chips for the white chocolate. Next time I would like to try it with a little more oats.
