Tilapia Ceviche
Wicked Uncle Keith U got this right about the peppers. Can't have a Tilapia Ceviche without some chopped jalapeno or serrano peppers (at least not in Texas!)..and because it's raw, it really needs at least 5-8 hours in the fridge to(marinade). Also, add some cooked 'salad' shrimp, and a 1/4 cup of good salsa but forget the (Pace)use hernandez (hot)salsa, Fish Ceviche is one of the best,rate right up there with Sashimi, Sushi an rice hot cakes with Green sauce. Mexican Ceviche
we served this over romaine lettuce change the white onions for red onions, change the shrimp to Tilapia fish 3/4 cube it was great, (next time we will add shrimp with fish

Irish Soda Bread in a Skillet
Been a long time sence I ate it, an my wife never has till tonight she rave about how good it is an quick to make/cook it. u can change it up with 1/3 each sour cream,condensed milk,buttermilk room temp,mix well
