Meatball Sandwich

This was exactly what I was looking for on a casual Saturday night at home! The meatballs were terrific. This was the first time I ever baked meatballs and they came out really well. Will definitely make again....

Creamy Blueberry Pie

Reviewed: May 11, 2011
No changes except....add a little cinnamon to the topping. FABULOUS pie!!! We have an abundance of fresh blueberries each year and the pie is great with fresh or frozen berries. Not necessarily "creamy" but DELICIOUS! 6/11 Made this over and over it is still the BEST blueberry pie ever!

Tasty Tender Pork Tenderloin

Reviewed: Mar. 27, 2011
This was yummy.....very tender and tasty, just like the name says! Of course, I didn't have any Russian dressing but mixed Catalina with some mayo and hot sauce and a bit of horseradish followed the rest of the recipe and both my husband and I really loved it. Next time I am going to thin out the sauce before serving and put it over rice. Maybe will have to add a little more dressing to do so, but it will be worth it. As is, it was delicious.

Rice Pudding

Reviewed: Dec. 29, 2010
I should have read more reviews before making this.....I think the recipe was written incorrectly. The rice should NOT be cooked. It MIGHT have set up with uncooked rice, but even though I added more rice (my gut told me to) and cooking for an extra 20 minutes.....it's still in the oven but I doubt it will ever thicken no matter how long I cook it.

Butternut Squash Soup II

Reviewed: Sep. 9, 2010
This was really terrific! Our garden has produced an over-abundance of butternuts this year. I love squash soup but wanted to try something different. This is the best recipe yet. I am usually a creative cook, but used this recipe almost exactly, with the exception of the celery, although I did add a few celery leaves. Peeling the squash is a pain, so I baked it for one hour and it was perfect and soooooo simple to peel then. I am having a large gathtering next month and will make this recipe for a starter.......am sure all will enjoy! oh, don't forget the dollap of sour cream!

To Die For Blueberry Muffins

Reviewed: Jun. 7, 2010
Definitely add a bit of lemon zest, vanilla and a dash of nutmeg as others have suggested. There is waaayyyy too much topping. I used the excess on a blueberry pie. Do not eat them right out of the oven, however. The next day they are delicious, but not "to die for"....

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Nov. 23, 2009
All my life I have wanted to make a rolled cake. Today was the day (I'm almost 60!). Anyway, it turned out just like I expected. Fabulous...although I forgot the nuts. Will work them in next time for sure. It rollled great but the key IS definitely a LOT of powdered sugar. thanks for this recipe and try it....it's GREAT!

Flounder with Shrimp Sauce

Reviewed: Nov. 10, 2009
This was a hit in our house tonight! Had a pkg of frozen flounder and needed something new to do with it. I always have frozen shrimp too. Anyway, followed the directions to except that I didn't have fresh lemon juice and had to use bottled (yuk!) and I added a couple of chopped green onions to the sauce. Thought it would add to the color and we just love the flavor of them. It was excellent. Hubby said to add it to my recipe list. Oh.....would have been good with a bit of dry white wine if you have some when you make this!

Macaroni Ham Salad

Reviewed: Aug. 15, 2009
I just had to use up some leftover ham and didn't feel like anything hot in the 90+ day. This was surprisingly GOOD! Only had green onions (which NEVER hurt anything!) and used both chopped dill pickles and some sweet relish. We enjoyed it for dinner and had leftover for lunch today. It is really good....the pickles make it!!!

Broiled Tilapia Parmesan

Wow this was really good and different from how I usually fix tilapia!!! Instead of basil, I used fresh dill and did sprinkle filets with Old Bay as suggested. It was just wonderful!

Buffalo Chicken Rolls

Reviewed: Feb. 10, 2009
This was a great idea but I didn't have anything but tenderloins and I put the cheese on the top. It was scrumptious! I would have really LOVED it if I could have used bleu cheese, but husband won't go near it, however, the provolone was really yummy too!

Chicken a la King I

Reviewed: Feb. 10, 2009
Quick and easy and very tasty! I used peas instead of green pepper and only a few TBS butter and flour because I wasn't making a whole lot. Also, using chicken broth was extra easy instead of plain water and bouillon powder. Oh, and a good dash of sherry.....traditional to ala king. Will make again when I can't think of anything else to do with leftover chicken.

Pasta with Kielbasa and Sauerkraut

Reviewed: Feb. 1, 2009
This was excellent. I used bow tie pasta because I wanted to use it up and a little less mustard. Don't forget the pinch of cayenne.....it adds just a little "zing" to the dish. Will keep this in my recipe box to make again one day.

Cheesy Baked Cauliflower

Reviewed: Jan. 17, 2009
I made this but was not impressed at all! Such a small amount of mustard and mayo that it didn't do much for the taste. It was pretty but not very tasty. Will try others from this site next time and take this one out of my recipe box.

Peach Bread

Reviewed: Aug. 20, 2008
Pretty good...a different way to use up all the fresh peaches off the tree!  Not great though.  I also added more peaches and not so much cinnamon.  Peach flavor does not permeate the bread like others said, but the chunks of peach make it moist and quite tasty.

Bob's Stuffed Banana Peppers

Reviewed: Aug. 6, 2008
Great recipe, however, I rarely ever go exactly by a recipe. I had a lot of banana peppers from my garden. they seemed way too small to stuff, so I had to make a slice in them to put the stuffing in. Made sauce from fresh garden tomatoes and more garlic because we LOVE garlic. Used a lot less sausage because I knew that 2 pounds were WAAYY too much, in fact, I used only 3 hot sausages out of their casings, browned ahead in skillet. Only had to cook about 30 minutes. They were wonderful and will make them again when I pick a bunch more peppers. It will probably come out a bit different a second time but its a great recipe starter! Thanks for the idea!

Streusel Topped Blueberry Muffins

Reviewed: Jun. 27, 2008
Wow! These were the best blueberry muffins ever! My blueberry bushes are overwhelming me and we are tired of pies, cheesecakes, etc. so I tried this muffin recipe. Only made 2 small adjustments. Used half butter and half Smart Balance and added about half cup of chopped pecans. The recipe made more than 12 Large muffins....maybe because I loaded them with huge blueberries? YUM will make these again.

Blueberry Cheesecake Pie

Reviewed: Jun. 22, 2008
I haven't eaten the "pie" yet, but I did listen to some of the other bakers and I think it is going to be absolutely fabulous! First, I only had cinnamon graham crackers, not plain. I have an abundance of fresh berries and used a full quart (4 cups) mixed with 3/4 cup water and the cornstarch, etc. I didn't use all the sugar as per everyone's saying it was overly sweet. Also, the picture was of a PIE....not an 8x11 glass dish. I opted for the glass dish (8 1/2 x 11). I also used 12 oz cream cheese and 1/2 cup sour cream and a dash of vanilla. I think it will be wonderful....without the cool whip (yuk)..only whipped cream or ice cream for us!
