Chicken Cheese Chowder

Made this today exactly as written....not great! Pretty bland as a few others mentioned. Put in a bunch of fresh black pepper and added some green onions and fresh parsley on top to try to help it a bit. DH doesn't like hot sauce but I put some in mine....still not so good. Oh well, to each his own! I won't bother to put this in my recipe box.

Sausage Pasta

Wow! this is really good and very easy and simple. I used 1/2 hot and 1/2 sweet sausage and fresh spinach and a little less chicken broth. Also, I cooked the onion with the sausage and let it all simmer longer than suggested, but all in all the flavors were amazing. This will be in my recipe box for a quick, easy meal for last minute company or just for us! Served in bowls over the past with a homemade focaccia bread. YUM

Baked Penne with Italian Sausage

I've made a baked pasta a million times mostly from memory or what I had on hand. Never really made it with sausage before, but gotta say....this was delicious! I looked for recipes with Italian sausage for dinner last night and this was the only one that came up that sounded any good to me (I'm not a big fan of sausage because I always wonder what's in it!). Anyway, I made this with a few tiny tweaks with the tomatoes I had in my pantry, but basically made it according to recipe. Of course, I used EVOO and more garlic and had no white wine but added a splash of beef broth to deglaze the pan. It was really yummy and made a lot of leftovers for me and my husband (we LOVE leftovers for lunch or when I don't feel like cooking anything else). Put this in my recipe box for future use! It's really good!!!!

Chef John's Blueberry Clafoutis

Made this last week for our anniversary breakfast on the deck, perfect weather, mimosas and the start to a beautiful day. Anyway, went by Chef John's recipe exactly except used a 9 inch baking dish, and it was perfect. Easy, quick and delicious. Not "eggy", but custardy. Do NOT overcook this. Mine had a tiny bit of dryness on the very bottom of the casserole dish, but that was ok. We are having company tomorrow for brunch and this is going to be the star of the morning for sure!!!!

Grilled Pork Tenderloin

Needed a quick easy way to prepare pork tenderloin (I always forget to marinate meat early in the day!). This was sure simple enough and it was amazing. Followed directions to a T and it was great!!! Used my gas grill and turned the pork a couple times. Mine was tender and very moist. Served with a potato salad from this site along with a salad. YUMMY dinner!

The Best Potato Salad

If this tastes better after it sits a while, it will be best ever potato salad. Did waaayyy too much tasting while preparing it, so I hope I still have room for some for dinner. Halved the recipe and added a little celery and a titch of mild pepper rings I found in the back of the fridge instead of pepperoncini. Would have loved to add the black olives, but husband hates them. Great nonetheless!

Chicken Florentine Casserole

This was quite good. I made a few changes according to some of the other reviews. Fresh spinach, several slices of bacon, and cuting the chicken into chunks sauteing them in some bacon fat all worked for me. I used fresh grated pamigiana cheese too. With a splash of white wine this would make a nice company dish served on thin spaghetti. My husband doesn't care at all for spinach, but he said the dish was real good and he didn't realize spinach was even in it (I don't know what he thought that green stuff was?) It wasn't the ultimate recipe, but I will make it again one day.

Southern Fried Cabbage

It was ok but not my favorite, but I'm not a huge cabbage fan. It coild have used a little more bacon, a little less cabbage for my taste. I added a titch of red wine vinegar before serving to give it a little something extra. Probably will not make again.

Anniversary Chicken I

This would have gotten 5 stars if I had followed the recipe exactly, but since I didn't have any teriyaki sauce I had to improvise my own and it was a little too spicy (I used soy sauce and hot Chinese sweet chili sauce with some ginger) It was still delicious. Purchased some real teriyaki and look forward to making it again soon with the right ingredients.

Delicious Ham and Potato Soup

was not too sure about this recipe but made it exactly as written but did use box of chicken broth for the water...thought it was easier than using bouillon cubes for me and added a chopped carrot. It is quick and SO simple. Making the roux and then adding the milk mixture to the vegetables was genius. Have put this in my recipe box for cold winter nights and for my friends when they are sick. Make this one....you will love it!

Basic Bechamel Sauce

This is a good basic recipe. Take your time making it. Rushing it ruins it. So does the salt!!! I followed the recipe exactly and what a mistake!!! Do NOT...do NOT....use 2 teaspoons of salt!! One is plenty. Also, if you aren't too fond of nutmeg, add maybe 1/8tsp. The 1/4 was fine for me. Used this to put over shrimp and crab omelet for a special brunch. Just tell everyone not to salt anything if you are going to use the sauce. ( after finishing it, I added some swiss cheese and a pinch of dill to complement my seafood omelete. it was pretty good). Would definitely use this same recipe again.....minus all the salt!

Meatball Nirvana

These were really good and simple. I was surprised that there was no egg in the recipe, but they held together just fine. Will keep this handy. The leftovers will make good meatball subs.

Easy Meatloaf

I always made meatloaf with a recipe that my mother had but lately it just seemed to lose its appeal so I thought I would try something a bit different. SO glad I did! THis worked out just perfect for me. It held together really well and the topping was especially delicious....definitely NOT too sweet for us. I thought a cup of milk would be too much, but not so. This will be my new meatloaf recipe from now on.

Oven Fried Parmesan Chicken

Flavor was GREAT! Used fresh grated romano cheese and a bit more garlic...as there is never too much garlic for my husband! I used boneless breasts as always, but I cooked them too long and they were a little dry. Should have only cooked them for about 40 minutes and they would have been perfect. Can't wait to make them again. Will use the leftover in a salad.

Sweet Potato Pie I

Husband grew sweet potatoes for the first time. They were pretty skinny little guys....too skinny for our favorite baked sweets. So thought it might be good to try the pie. SOOOO glad I did! This recipe had the most reviews, so made this one. Used 1/2 white sugar and 1/2 dark brown and used evaporated milk as we only drink almond milk..... Pie was terrific! A little cool whip and YUM! Will definitely make with some more of my weird skinny potatoes!

Pork Tenderloin Diablo

This was absolutely the BEST tenderloin recipe ever! The ONLY thing I changed was that I did not have any heavy cream....so, what did I do? I substituted plain almond milk since that was all I had. Actually I think that the nutty flavor of the milk might have helped...but will probably use half and half next time. There WILL be a next time. BTW, don't skimp on the mustard or horseradish...you'd never know that there was so much of it. YUM...oh, I might think of doubling the sauce next time???? GREAT try it!

Ham and Shrimp Gravy

We have always LOVED shrimp and grits and have tried many, many recipes. Today I tried this one since I had all the ingredients...even fresh jalapeno and some leftover ham. The video was very helpful because I don't usually cook things in butter enough but this turned out just like Chef John showed us. We really loved it and served it on grits with a little sharp cheddar added. Very easy and very good.... This is definitely a keeper!

Chinese Chicken Fried Rice I

So funny after reading a lot of the reviews of this recipe!!! No one makes it the same and some people think it tastes like take-out and others don't.....so who's to know whether you'll like it or not??? This is better than some, not as good as others...fried rice is what you make of it and your tastes. I never put in celery or peppers...almost always use leftover pork and peas, not pods. Soy sauce is essential and green onions are a must...make this recipe the way you want and it will be absolutely delicious. The idea and cooking process are the right idea, so just go with what you like in it....
