Bacon Bourbon Apple Pancakes

My poor husband...he is at work and we didn't save any for him! I made a double batch and thought it would be enough since it's just me, my 6 year old, my 3 year old, and my 11 month old. But we loved it and couldn't stop eating! I used Fuji apples I took off my tree last Fall, chopped and frozen in my freezer. Because they are really sweet I only put in half the sugar and I let them cook until they caramelized. It was perfect--we didn't even use any syrup and you know how kids love syrup! I didn't add any bourbon. I didn't have oat flour so I used half quick oats and half old fashioned (since I was running out of quick oats.) I didn't process them or sift anything, which just goes to show how forgiving this recipe is. I put in exactly the listed amount of bacon but only because that's all I had--I think you can always add more bacon! A great recipe. Now I have to whip up another batch for my husband. Too bad his won't have bacon!

Zucchini Soup II

Made it in a crockpot overnight. Because of that, I just threw in the vegetables together and didn't sauté them first. I substituted cream of chicken for the cream of mushroom and added some fresh mushrooms I had on hand. The next afternoon I processed it in the crockpot with my immersion blender (LOVE those things!) and then I tasted it and it was perfect! I ended up leaving out the butter, flour, celery and onions (didn't have any), bouillon, wine, and sour cream. It was so good already that I didn't see the need to add more calories. An excellent soup for a chilly day.

Easy Apple Coffee Cake

I made this in a 9x13 and used a spice cake instead of yellow. Because of that I didn't make the topping (I was using Fuji apples and it didn't need more sugar either). The apples from my tree were big--I mean, REALLY big--so I just used two big ones and a little one. I chopped them up, as others suggested, and mixed them into the batter. I almost had more apples than batter! I used the rest of the ingredients as stated and it turned out WONDERFUL! I did have to cover it with foil to keep it from browning too much on top. The cake is denser than cake mix cakes usually are which I really liked. It is not quite as dense as a regular coffee cake, in my opinion. But still yummy! It is just the right amount of sweet. If you are not using tart apples I can't imagine adding more sugar to this than what the cake mix and pudding already have.

Pigs in Blankets

As a Pigs in a Blanket recipe, this is top-notch. Of course, it all depends on the quality of your hot dogs and the quality of your biscuit mix. I recently made my own biscuit mix, so this is the first time I've had PIAB without that "bisquick" taste. Though it was subtle, I think the cornmeal does add something nice and different. After reading some reviews about how it was hard to spiral-wrap the hot dogs I used a paper towel to make sure that my dogs were dry. They were a cinch to wrap. Since it is December I told my family we were eathing "North Poles" for dinner. My 3 year old ate TWO of them, when most nights she just picks at her food! I had also read that they didn't brown enough on top, so I brushed them with an egg wash. They turned out beautifully golden. Unfortunately, they were almost black on the bottom. I know that ovens vary...wish I had cooked them at a lower temperature. Overall, a very fun recipe!

Apple-Stuffed Acorn Squash

The apples and honey were a nice change from my usual acorn squash recipe, but the baking time was all wrong. I had timed my dinner preparations so everything would be done at the same time, but when I took out the squash it was still so hard a fork wouldn't go in. I had to hurry and throw one half into a Cornware dish and mircrowave it for four minutes, bringing it to the table later. I left the second one in the oven and it took a whole hour to cook. The squash I had were very large, so maybe that was the problem. But everyone loved the taste!
