Macadamia Nut White Chip Pumpkin Cookies

These were very easy to make and very popular at my cookie exchange. I usually like to "tamper" a little with recipies after I make them once, but I never change a thing on this one. It is a classic keeper in my cookie file!

Ham and Beans

Very good recipe. I also cooked it in the slow cooker using some chicken broth as well as a good old ham hock. I cut the brown sugar down a bit as well, but even at half the amount it added a great flavor. I will for sure be using this one again!

Cola Pot Roast II

I was simply amazed at how wonderful & easy this recipe was. I also cooked it another time in the slow cooker on low all day..... worked well that way too. The is a true family pleaser. Be sure to mash a tater or two as well or have some biscuits ready for that wonderful gravy!

Dave's Low Country Boil

Excellent recipie. I definately suggest adding the Lemon & onion to the cooking pot, but it's a matter of taste. Here in North Carolina we also call this Frogmore stew. Really great to serve outdoors to a large crowd!

Salmon Cakes II

Very good recipe.... I added a bit of parsley and some Old Bay Seasoning just to give it a little more kick. Also - if your salmon is a bit too "fishy" squeeze in a bit of fresh lemon juice and it tones right down. A keeper for sure

Better than Sex Cake IV

I made this for a Christmas party and it disappeared in no time. The cake makes a light tasty treat... not nearly as sweet & heavy as a traditional iced cake. Will make this a keeper!

Best Ever Blueberry Cobbler

This recipie was very tasty & very easy. Came out just perfect. If you tend to like sweet cobblers though you may want to add a bit more sugar. I found this one just right for my taste. A keeper for sure.

Todd's Famous Blueberry Pancakes

This is indeed one of the best and easiest pancake recipies I've made. I doubled it and they all disappeared like magic. Great because they are not to sweet and are very light. Thank you Alison for sharing this one. It's a KEEPER!!

Broccoli Potato Bake

I did this recipe with steamed fresh broccoli and the chunky style potatoes as suggested by other reviewers. The blend of cheeses is wonderful and very open to doing your own experimentation with the type/tase you like. Reduced fat cream cheese works wonderfully well.

Au Gratin Potatoes

The dish definately needs mixed before baking. Our family found it a little on the bland side as written. Next time I will try some of the suggestions for sicing it up. The dish is easy to make and would be very good for the church covered-dish dinner.

Mango Salsa Chicken

This salsa is even better if you make it a day ahead and let the flavors meld. I also took the suggestion to use on fish..... WOW it is excellent. I think it would also be good on grilled pork chops as well. Will try that next. I wasn't too open minded about the mango thing, but I'm a believer now!

Different Chicken Divan

This recipie provided a nice twist to the usual dish. Was just a tad heavy on the curry for our taste, buth the cayenne was very good, though we like it spicy. I might tone that back a little when making for company. Overall a very tasty and easy dish!

Artichoke and Roasted Red Pepper Dip

This was a great appetizer for my dinner party. I put it together a day ahead and just heated it up. Served with a variety of crackers, this dish goes very quickly. Even my 14 year old who turned his nose at the thought of an artichoke liked this one. It's sooooo easy, but tastes and looks like you really worked hard.

Bacon Water Chestnut Rolls

I just made this for a dinner party. What a HIT!!! I didn't have mayo, si I made a little different sauce. Mixed 1/2 cup ketchup, 1/4 cup brown sugar and put in a few dashes of tobasco. Brushed on the tops after cooking. The texture with the bacon & water chestnut was very nice. Everyone wanted the recipe. Next time I'll try the mayo sauce

Diet Soup

I like this as just a vegetable soup..... light and easy. I add other "freebie" vegetables to keep it low calories and increase the flavor. A little garlic and hot sauce also gives the soup an additional kick. I do agree that if it was the only thing I had to eat I'd really lose weight. Make in small batches or even freeze some (it reheats very well) so you don't get tired of it so quickly.
