Lemonade Cake II

Reviewed: Jul. 19, 2010
I made the cake as instructed. Only change I made was I added a glaze of lemonade and powder sugar and drizzeled it over the top. The sauce you pour over the cake after it bakes - well the part that got on the outside of the cake was gritty when you ate it. I did not think the cake was more moist than any other box cake. Although it was liked by those who ate it, I feel it fell short of my expectations.

These are great. I took the suggestions of others and i made 1 1/2 times the filling. They are tart but GREAT. Be sure to use fresh lemon juice.

Swiss Green Beans

Reviewed: Apr. 1, 2010
I rated this as I did because I make adjustments to the recipe. I can't remember when I didn't make this caserole. I make a few changes though. I make it in a 9 x 13 glass pan and I double the sour cream topping. I don't double beans though. Make sure you use french cut canned grean beans. Makes a WORLD of difference!!!

Chocolate Chex® Caramel Crunch

Reviewed: Jul. 14, 2009
This stuff is to die for if you love carmel. I make it with 1/2 rice and 1/2 corn chex cereal and do not use the white chocolate glaze. Sometimes I add some cinnamon for a slight variation. Can't hardly keep the stuff in the house!! HIGHLY RECOMEND.

Gooey Butter Cake III

This was good but I found the baking time to be a bit long. Next time I will only bake 35-38 min. The "goo" ws a bit over cooked.

Pina Colada Muffins

Reviewed: Jun. 19, 2009
I made these last night. Couple of changes - used light sour cream and butter in place of margerine because that is what I had on hand. I also added 1 tsp. coconut extract in addition to the rum. I made in jumbo muffin pan because we like a bigger muffin. It made 6 really nice muffins. Very moist but a bit on the heavy side which is fine because we like our muffins like that. If you are looking for a light fluffy muffin - do not make these. Will definately make this again and again.

Cafeteria Carrot Souffle

I made this for the second time yesterday for Easter at the request of my daughter who is home on leave from the Marine Corps. It is so good. It's more like a desert than a vegetable dish.

Easy Slow Cooker Ham

Reviewed: Apr. 13, 2009
I made this for easter and was VERY disapointed. I made EXACTLY as directed. The cooking time is WAY TOO LONG and my ham was mush after about 5 hours set on low. Will not ever make again. It sounded like such a good recipe but turned out so bad.

Baked Pineapple Casserole

Reviewed: Feb. 10, 2009
This is good but next time I make it I will make the following changes: use 6 tbsp. butter instead of 8 because it was a bit greasy. Use 7 slices of bread instead of 5 because I would like it a bit firmer. I also added extra spice as we are lovers of spice. Other than that the recipe was very good. Even better with a little bit of canned whipping cream on top!!

Melt In Your Mouth Pumpkin Bread

Reviewed: Feb. 10, 2009
I added the baking powder and my bread still did not rise very much. I substituted 1/2 c. unsweetened apple sauce for 1/2 c. of oil and only used 1/2 c. oil for a total of 1 cup. Used 1 cup splenda and 1 cup sugar. Otherwise I followed the recipe. It has a good flavor but is VERY dense and EXTREMELY moist - which is not a bad thing. I have made other pumpkin bread that I like better so probably will not make this again.

Pumpkin Bread IV

Reviewed: Feb. 2, 2009
This bread was OUTSTANDING and made 3 large loafs as indicated. I used 2 whole small cans of pumpkin which was slightly more than the recipe called for but it did not make any difference. I added spices as indicated and then added 1 tsp. of pumpkin pie spice for extra zing as I like allot of spice. Baked for 55 min and came out perfect. Gave a loaf to my elderly mother and she LOVED it. Will make again for sure.

BLT Salad

Reviewed: Oct. 17, 2008
I made this salad for a dinner at a friends house. It was very well received and got great compliments. Very easy to make. I made the dressing with 1 cup light mayo and 1/2 cup fat free mayo and no one could tell (doubled amount). The reason for 4 stars is that I doubled the dressing because I doubled the lettuce but it seemed like there was a little too much garlic if you double the amount posted. Other than that it was great!!!

Grandmas Chicken Chardon

Reviewed: Mar. 31, 2008
I made this for dinner last night and it was easy and very good. I took the suggestion of others and doubled the butter/lemon juice mixture. I think it would have been way too dry with the original amount so that is why I rated only 4 stars. Husband liked it so I will make again. Next time I might add some raw onion in with the mushrooms for some extra flavor. We are onion lovers.

Chicken Enchilada Casserole II

Reviewed: Feb. 27, 2008
I made this for the first time last night. I took the advice of others and used one can of rotel type tomatoes and added about 1/4 cup of salsa to that. I did not use full can of soup (cream of celery) and I used about 3/4 cup of sour cream. Everything turned out well except it seemed a little dry - I think due to cutting back on the soup and sour cream. I also substituted corn for the beans as we do not like beans. It was good but next time I will add the full amount of soup and sour cream and perhaps a little more salsa. It was good though and the tortilla strips did not turn to goo as some reported.

Artichoke Chicken

Reviewed: Feb. 13, 2008
I rated this a 4 star because of all the changes I made based on previous reviews. I put artichokes in food processer with several thick slices of onion, about 1 tsp of chopped garlic and processed. I mixed 1/2 cup mayonnaise and 1/2 cup sour cream along with 3/4 cup parm. cheese and added the chopped mix. I did not have marinated artichokes so I brushed a robust italian dressing on my chicken prior to adding the topping. I also baked longer - 50 min. The result was very good however next time I will used the marinated artichokes. Will def. make again.

Sausage Stuffed Mushrooms II

Reviewed: Jan. 30, 2008
These were good with a few changes which is why I rated a 4 star. I added chopped onion and minced garlic to the sausage (medium spice sausage)while browning and only added one pkg of cream cheese. Stuffed mushrooms and sprayed bottem of glass 9 x 13 pan with Pam. Baked in 350 degree oven for 18 min and then put under broiler set on high for 2 min. Very Good!!

Cola Sauerkraut

Reviewed: Apr. 25, 2007
I thought it was good but nothing to brag about. I added some brown sugar and that seemed to help a bit. Could have probably had the same result if I just cooked sauerkraut with small amount of butter and just the brown sugar. Probably will not make again.

Amish Breakfast Casserole

Reviewed: Apr. 3, 2007
I made this last night for dinner. The only change I made was I added extra chopped onion because we LOVE onion. It was even better when I had left-overs for breakfast this morning. I did have to cook it a little longer than called for. Awsome recipe.
