Huli Huli Chicken

This was fantastic entree that I prepared today. I made minor modifications due to the fact that I had mixed recipes up. Otherwise it would have been 5 stars. I increased the ketchup to 3/4 cup and brown sugar to one cup as that was what the other recipe called for. After tasting before marinating, I did add more pineapple juice. Marinated for 5 hours and then I grilled the chicken breasts on the grill basting with reserved marinade not used on the chicken. Complete kid and hubby pleaser. Working into the summer menu rotation. I feel like this recipe is a winner as is but I'm glad I made my mistake and ended up with a slightly different version of huli huli. Thank you for sharing!

Easy Chicken Taquitos

The recipe prepared as written is a very simple but bland recipe. I ended up adding taco seasoning and sour cream in order to jazz it up but it still needs something like green chiles or salsa in order to really bring out the flavors. All in all, not a bad recipe, just needs to be tweaked and it would be a really great substitute for tacos. Thank you for sharing as this was a wonderful place to start for my family dinner tonight.

Hamburger Steak with Onions and Gravy

Very good recipe. My picky eater actually requested seconds. The only modification made to the original recipe was to omit the sherry. I missed the part about adding the onions to the oil with the hamburger patties so I just cooked them after I finished browning the patties. I also browned the flour for a darker color and richer flavor. All in all, this was a wonderful recipe that hit the spot and didn't call for a lot of prep or fuss. Will be working this into the rotation. Thank you so much for sharing. **********************************************************************Made this again tonight and I doubled the gravy ingredients, omitted the sherry and it was just ok. I think the problem was the fact that I used ground chuck from Wal-Mart instead of from a local grocer that butchers their meat. I highly recommend that you use a good quality ground chuck or ground round if using Walmart meat. The end result tonight was a lot greasier than the times I have made it before. I won't change my rating because I do think it is worthy of my 4 stars originally rated. Also, remember, the recipe calls for garlic and onion POWDER, not garlic salt or onion salt.

Brown Sugar Smokies

Broccoli Chicken Divan

Not a bad recipe as is. I had to use what was on hand, so I did make changes, hence the 3 stars. For the soup, I used Campbells broccoli and cheese because that was what was in my cabinets. I did add sour cream and doubled the cheese like many of the reviewers also did. Still feel that the recipe needs something but am not sure what. All in all, it was a quick and filling meal.

Pizza Dough I

I made this twice tonight. The first time I made it, I proofed the yeast in the water with sugar before adding it to the dry ingredients (which yielded a thicker, chewier crust). The second time, I made according to the recipe directions (which yielded a thinner and crispier crust). This is actually very easy and it serves the purpose. My kids and I felt that this is a homemade version of the pizza dough mixes sold in stores that we use quite frequently. The bonus with this recipe is that I didn't have the pull back that I normally get with the store bought mixes. I look forward to working with this recipe to try and tweak it. Maybe give it a bit more crunch and a wee bit more flavor.

Bolognese Sauce

After reading the reviews, I decided that I must make this and see how it turned out. The only substitution in the beginning was to double the chicken broth because I didn't have any wine on hand and use tomato paste instead of sauce. I did saute the Holy Trinity and garlic in the bacon grease and olive oil because that is essential in releasing the flavors of the carrots, onions and celery. The sliced mushrooms were mixed in with the ground beef as it browned. I repeatedly tasted the sauce as it was cooking and found that it lacked something. I added 3 additional whole cloves of garlic and a couple of beef bouillon cubes and it was still missing something. Salt, garlic powder, two chicken bouillon cubes and it was still off. Finally added about a 1/4 to a 1/3 cup of sugar in order stave off some of the bitterness and it was just what the sauce needed. I also let the sauce simmer for about 4 hours to help the flavors to develop. To finish it off, I added 1/4 cup of milk and fresh grated Parmesan cheese. My kids raved and I enjoyed the finished product. However, when making this, you must continually taste the sauce to see how it is progressing and make adjustments as necessary. Thank you for the good base for our dinner tonight.

Best Tuna Casserole

I had high hopes for this recipe due to the ratings. I was unimpressed and my one child who will eat almost anything with a noodle in it, didn't even finish it. I had read the reviews that complained of dryness and I added a can of evaporated milk which helped with that issue. I did saute the onions in a bit of oil in order to soften them up but on a whole this was an uninspiring, bland recipe. I just don't know what this recipe needs but it is lacking something.

Classic Waffles

Made this for the first time and it was pretty good. I did feel that there was a little too much salt. I didn't find the saltiness overpowering like some reviews said which leads me to believe that maybe they were using baking soda instead of baking powder. I do believe that next time I will increase the vanilla and decrease the salt. This is a solid recipe that can be built upon and I look forward to making it again. Thanks for sharing!

Honey Baked Chicken

I am not exactly sure what I was expecting. I chose this recipe based on the ease of it versus other similar recipes. Followed the recipe as written and it smelled wonderful while cooking. I was just disappointed in the sauce being so runny and the lack of flavor. While not a complete disaster, this one will need some tweaking before being worked into the dinner rotation.

Roast Beef and Gravy

This is the first recipe that I ever made in a crock pot. It's one of my favorite comfort food. No roast? You can substitute round steak in its place. Hope to continue making it for another 20 years.

Fresh Southern Peach Cobbler

Delicious recipe in which I made a few modifications (which is the reason for 4 stars instead of 5). Doubled the dough, doubled the cornstarch, omitted the cinnamon in the peach mixture, decreased the cinnamon in the topping mixture by half. My family loved this and is asking for more! Grilled Chicken Wings with Sweet Red Chili and Peach Glaze

Apple Crisp II

Made this today. Cut the recipe in half but kept the topping the same amounts. Recipe is wonderful but I would recommend that you use double the amount of topping as that is what actually makes apple crisp so great. Thank you for sharing. Will be adding to the menu rotation.

Grandma's Noodles II

I prepared the recipe by hand with a couple of changes. I did not let the dough stand after rolling it out (mainly because I forgot to). Also, I only let the noodles sit for about 10 minutes before adding to my chicken stock. This is definitely a keeper and will be added to the weekly rotation. A note of caution to everyone, the noodles do increase in size so roll them thinner than you want them and cut them smaller than you want the finished size to be. Really enjoyed this recipe and thank you for sharing.

Beef Chimichangas

This was a nice change up from our regular taco night. Prepared as directed with the exception of omitting the chilies for my children and cutting the vinegar in half. Also, since I doubled the recipe, I made half of the chimichangas with flour tortillas and half with corn tortillas. I really preferred the corn tortillas. On a side note, if you do make both flour and corn chimis, you will have to cook them separately because the flour chimis do tend to crisp up faster by about five minutes. Great recipe that will be worked into the weekly rotation. Thank you for sharing!

Baked Potato Salad

This is a wonderful change from standard mustard potato salad. I have made this for quite some time. I have also switched it up and used shredded cheddar and half sour cream / half ranch dressing for a different taste. The one thing I would recommend is that when frying the bacon, I always cut it up into 1 inch chunks and it crisps up so much faster and nicer. Try this recipe as is or with a few changes, either way, you will like it!

The Best Meatballs

Great recipe! The meatballs turned out the way a meatball should. A nice crust on the outside yet moist and tender on the inside. I can say that this is one of the best recipes that I have made. I would have rated it a 5 star recipe, but I had to sub all beef for the veal and pork and I didn't have time to run to the store for fresh Romano (subbed grated parm instead). Thank you for sharing!
