Coconut Custard Pie I

This pie is rich and wonderful, just like the ones my grandma used to make. When she died, all her great recipes went with her. My dad goes crazy for this pie! It's like having a part of her back. Thanks, Lesley! EDIT - 6 years later and we're still loving it, but I always use a 10-inch crust so to ensure that the pie will set.

Baked Mushroom Rice

I like the taste of this recipe, but I had to more than a cup of water during the cooking. The third time, I also covered it. Next time, I will cover the dish for part or all of the cook time.

Sour Cream Chicken Quiche

Chocolate Peanut Butter Pie III

This did not taste good to me. It needs some sugar or condensed milk and a little less cream cheese. It had a salty flavor. I will not make it again.

Baked Salmon I

I did not like this. It was attractive, but tasteless. My boyfriend, the human garbage disposal, did not eat leftovers, which is a very bad sign. I followed the recipe to the letter, too. Thanks anyway.

Mango Custard Pie

I'm surprised at the negative review. I loved this. It is certainly different from the typical mango dishes, but was very tasty. I used mango from a jar and lime juice from a bottle, but it was still good!

Lime Kissed Cheesecake

I took a lot of shortcuts on this and it still tasted wonderful. I halved the recipe, used bottled juice instead of fresh, and drizzled some lime juice over a store bought graham cracker crust before filling. I took it to work and we devoured it. One woman said it was the best cheesecake she had ever tasted. Thanks! - EDIT - 4 years later, I still love this. I have now made it per the recipe, and it comes out a lot more tart with fresh squeezed juice, but it's still delicious to me. I did get a big crack in the middle when I made the full-sized one, so I covered it with garnish

Awesome and Easy Creamy Corn Casserole

This is so AWESOME! I halved the sour cream and added condensed milk for sweetness. I made it twice in one week. I'll never make regular corn muffins again!!! Bravo! EDIT - My mom loves this too. She makes it with broccoli instead of the corn and all her sisters require her to bring "broccoli bread" to every family event.

African Chicken Stew

Yum! I made this last night. The flavor is wonderful and spicy, but I think it needs a little more liquid. EDIT - 5 years later, this is still one of my favorites. I use cooked chicken to save time, which definitely requires additional liquid. I also double the potatoes to eat without rice. When I am low-carbing it, I skip the potato and rice and double or triple the chickpeas. It's alway delicious!

Chocolate Chip Cheese Ball

This went over very well with my guests...after I explained that it was dessert. Tastes great with chocolate "vanilla" wafers! It melts in your hands, so be ready when you attempt to shape it into a ball.

Annie's Fruit Salsa and Cinnamon Chips

I love this...but I am too lazy to keep making the chips. I now serve the fruit salsa with cinnamon pita chips (Stacy's brand in my area). Just as tasty and much faster!

I love this because I'm lazy and it's easy. I serve it almost every time I entertain because people love it. I usually offer flavored dippers like Cracked Black Pepper Triscuits or garlic pita chips for those who want more flavor.
