Dad's Pan-Fried Green Beans

Yum! I don't like the "fresh" taste of green beans because I was raised on the canned kind that are cooked almost to disintegration. This sauce made them enjoyable to me, even though I could still taste them. I used red wine vinegar instead of balsamic, because that's what I had. I used two 12 oz. bags of the beans that you steam in the bag, which made it quicker, and the sauce covered them fine.

Mushroom Stuffing

Made this for my first Thanksgiving, and it looks beautiful. I followed the recipe to the letter, but used low-sodium broth, which I won't do next time. I don't normally add salt to my food, but I thought this could have used a little more.

Kickin' Collard Greens

This was my first time cooking greens because I don't eat them, but when I sampled at the end to see if they were tender enough, they were, and the taste actually wasn't gross to me, which must mean they're delicious. The family loved them at the Thanksgiving table! (Being a real Southerner, I doubled the bacon per other reviews.)

Erica's Delicious Slow Cooker Beef Roast

I made this for Thanksgiving, and it turned out pretty good. While the beef was so tender, it fell apart during slicing, I think I expected to have more flavor. I added a package of onion soup mix, per other reviews and some bite-sized yukon gold potatoes. I seasoned the beef before browning, but it still tasted a little plain. Next time, I may marinate it and pierce it first. The gravy was delicious!

Penne with Chicken and Pesto

Yum! I ran up to my computer to try to find a quick dish to use cooked chicken, pesto, and bowties that I had in the kitchen. I tossed the chicken and garlic in olive oil for a few minutes and subbed in skim milk for the cream because that's all I had. I doubled the pesto and added a little cornstarch at the end to thicken. All this took less than 20 minutes and my husband thinks I'm a genius. I am, thanks to you!

Chicken Tikka Masala

This didn't taste like what I've had at Indian restaurants all, but perhaps it was my fault because I didn't follow directions to the letter, so I settled on 3 stars. I didn't have cream, so I used milk, and I marinated for a day, because I just don't believe in marinating chicken for an hour. The chicken ended up super-hot, and still didn't have that tandoori flavor I thought the yogurt would give it. The sauce just tasted like tomato sauce with cumin to me, not like masala. I probably won't try this again.

Ginger Salmon

i marinated this for 3 hours. I used spicy brown mustard instead of dijon, because I didn't have it, and ground ginger because I am too lazy to mess with fresh. The fish was moist, but not flavorful. I expected something sweeter. I mentioned it to a friend who really cooks (I don't) and she says she always leaves honey or other sweeteners out of marinade and puts them directly on the fish with the marinade over that.

Moroccan Salmon Cakes with Garlic Mayonnaise

This was a great alternative to the old-fashioned salmon cakes I grew up. I did get a weird aftertaste, but I think that was the spinach, which I actually may not like. (I've only recently started eating it, but normally smother the taste with cheese.) I used brown rice instead of couscous, since I had it on hand, but I tried to mash it a little before mixing it in. I used the one egg I had instead of two yolks. I followed the earlier advice of using the 1/3 C measuring cup sprayed with PAM to make patties, which worked great! (made 10) Perhaps if I actually cooked on regular basis, I would have already known this revolutionary strategy! I also baked instead of frying, because other salmon cakes have funked up the whole house for 2 days when fried and I didn't want to risk it. The garlic mayo was just okay to me, but it may have been because I used bottled minced garlic, rather than crushed. I liked it better with a sauce from another recipe of equal parts honey mustard and mayo, which neutralized the aforementioned aftertaste. I'll be making this again!

I've always loved these and disagree with cutting the butter. If you want to be healthy, it's better to avoid these altogether. They are far too delicious and rich for an everyday treat.

Nitey Night Cookies

My mom made these when I was a kid and we loved them. They're great for parties/showers because you can customize the color with food coloring. The melt in your mouth texture is awesome. It is critical to turn off the oven when you put the cookies in or they will brown, when they should be white.

Banana Chocolate Chip Cookies

I like these and disagree with the earlier review that the banana flavor is too subtle. If you use overripe bananas, the flavor is very pronounced. They should definitely be called muffin tops instead of cookies.

Crustless Spinach Quiche

When low-carbing, this is excellent. I use whatever cheese I have available and it's still tasty. I usually bake it in muffin cups for a quick South Beach breakfast - way better than the recipe in the book.

I love this because I'm lazy and it's easy. I serve it almost every time I entertain because people love it. I usually offer flavored dippers like Cracked Black Pepper Triscuits or garlic pita chips for those who want more flavor.

I love this...but I am too lazy to keep making the chips. I now serve the fruit salsa with cinnamon pita chips (Stacy's brand in my area). Just as tasty and much faster!
