Apple Cake V

This was really excellent. I used 4 smallish Braeburn (tart) apples. Added 1/4 cup buttermilk as per one reviewer, and substituted half the white flour with w/wheat flour. Used half brown sugar and added 3/4 cup chopped toasted walnuts. It fitted into two 4"x8" pans, and took about 50 minutes to bake. It was simple to prepare, taking only a few minutes. I grated the apples. I gave it 5 stars because it's an easy and delicious recipe. It doesn't need a topping as a breakfast loaf. Because I didn't have two loaf pans, I made a tray of small muffins with the remaining mixture, topping them with demerara sugar. Baked them for 25 minutes. Just as good as the loaf. All demolished in one day.

The Best Banana Bread

This is wonderful banana bread: light and fluffy. I made muffins and a 8' x 4" loaf from this recipe. I used half white and half brown sugar, and replaced half the all-purpose flour with whole-wheat flour. The results were simply superb. I'd add some salt next time, and spices which I forgot. Delicious all the same.

Deep Dish Brownies

This recipe yielded the most delicious brownies – dense and fudgy and very chocolatey.YUM! No hassles and easy-to-follow recipe, and very quick. I followed the recipe exactly. Perfect for our tastes and expectations. If you like brownies such as I've described, this is an excellent recipe.

Potato Cheese Soup

This was fantastic. I used cabbage and carraway seeds instead of celery. I doubled the cheese. Added the cornflour and cream at the end. It was delicious and filling. Easy to make with nothing much in the cupboard. This was even better the next day. Utterly delicious and very hearty. We enjoyed it enormously.

Dundee Cake

A beautiful cake that's very easy. I cooked it at a higher level in the oven for the first 1/3 of the baking time, then moved it to the lowest rack for the remainder, turning it at the same time. I used half wholewheat flour but otherwise I changed nothing. Simply perfect! Thank you for a great recipe.

Perfect Lemon Curd

Excellent recipe. I followed the suggestion of another reviewer and tempered the eggs. I also used a double boiler (pyrex, not metal). A beautiful smooth tangy lemony curd was the gratifying result. Thank you for the recipe!

Red Velvet Cupcakes

I made these in heart-shaped muffin moulds for Valentine's Day and frosted them with creamy chocolate frosting and a half strawberry to decorate. Utterly divine. The velvetiest texture imaginable! Perfect for Valentine's Day. My children LOVED them.

Deep Dish Brownies

Wish I'd reminded myself of the other reviewers' comments before I made a double batch of this recipe exactly as written. OKay! It's not BAD. They're yummy dark chocolatey CAKE. Not Brownies, though. My children will love them, all the same, but it wasn't the dense chewy consistency brownie that I imagined.
