Old Fashioned Creamy Rice Pudding
I had some leftover rice and decided I would like to make rice pudding. I went on line and it seemed as if all the recipes were using uncooked rice. Then I found this recipe which uses cooked rice. I followed the recipe exactly with the exception of using half and half instead of milk. The final product tasted very good, after all what recipe with milk, eggs and sugar doesn't taste good? But like several of the other reviews mine never thickened up and was very runny, more like soup.

Slow Cooker Chicken and Dumplings
I made this last night and it was very good. I used a small crockpot (for 2) and I put in one large (1 lb.) chicken breast with bone in. Added one small onion chopped, one can of cream of chicken soup and a bit of water. Cooked for six hours on high then topped it with 4 grands biscuits out of a package of 5. The biscuits raised so much I was afraid they might push the top off of the crockpot, but they came up just to glass lid. I continued cooking for 2 and 1/2 more hours and the biscuits browned up very nicely and were completely cooked. The chicken was falling apart tender and the broth was very tasty. I regretted not having some frozen peas to throw in when I added the biscuits. I don't understand the readers who complained about a soupy, gloppy mess as mine came out just perfectly. Wish I had thought to take a picture.

Good Old Fashioned Pancakes
I made them this morning and found them to be very good. I made a 1/2 recipe amount and followed a few of the suggestions on other reviews. I left out the salt as I don't use much salt, I added a 1/2 teaspoon vanilla and finding the batter a bit thick, added a couple of tablespoons more milk. The 1/2 recipe called for 1/2 of an egg so I just put in a whole egg. The pancakes cooked very quickly and were done inside just perfectly, with no problem of raw dough in the middle. This is a lot cheaper than a box of mix and only took a few extra minutes of measuring out ingredients. Thanks for sharing!
