Slow Cooker Chicken Pot Pie Stew

I made this for a friend who is due to deliver her first baby this week, and my family and I tried it before giving it away - you know, quality control. :) After reading the reviews, I reduced the salt and pepper called for in the recipe and am glad I did so. I also only used one extra large bouillon cube for a half batch of the recipe. I can't imagine how salty the recipe would be with three! It turned out really well - to make it a five star recipe, I would recommend adding chopped onion, and maybe increasing the proportion of chicken just a little. This will definitely be a repeat recipe when we need a little comfort food! Prep and cleanup were super easy and fast - a huge bonus for our busy family...

Slow Cooker Chai

This is a great base recipe for Chai that I will use again and again. I intend to make a batch each weekend and store it in the fridge to save on calories (and money) for Chai from the coffee shop! Comparatively, this recipe is pretty low calorie. 90 cal per serving compared to 240 cal for a grande Chai latte at Starbucks. My first batch had a good balance of spices, but was just a little sweet for my family's liking. I think next time I make it, I'll use 3/4 of the sweetened condensed milk rather than the whole can.

Pumpkin Pie Pudding

This is a wonderful fall and holiday treat, and was really easy to make. I doubled the recipe for a 5 quart crock-pot. I also added allspice, ginger, cinnamon, nutmeg and cloves in equal parts in place of the pumpkin pie spice... The cook time listed in the recipe was not accurate for my crock-pot and cooking conditions (although the crock-pot manual says that altitude and humidity, etc. can affect cooking times...) The doubled recipe was done in 3 1/2 hours on low. Be sure to check the temperature starting at about 3 hours. Also, for some reason my crock-pot cooked the pudding a bit unevenly, so there was a little waste from around the edges which got overdone. Finally, the texture and consistency of the "pudding" when cooled is very similar to canned refried beans, making it difficult to serve the pudding in an elegant way. So, if you're planning the dessert for guests, you may want to think of pretty dishes, mini pie crusts, etc. to make it look nice...
