Easy, Eggless Strawberry Ice Cream
I have now made this recipe twice in two days and it is superb! Given that someone said it made a lot more than an ice cream maker could handle, I halved the recipe and both times I filled the ice cream maker. Also, like a lot of reviewers, I didn't have whole milk so I used 1.5 c. heavy cream and 1/2 c. skim milk... The first time I made it, I used frozen strawberries because that's all I had on hand and accidentally used the full 2 c. that the recipe calls for - WOW! - talk about YUMMY!!!! Today I made it again and used 2 c. fresh strawberries... It was a bit 'thinner' but equally delicious... You definitely do not need the food colouring if you add twice the strawberries... This is a wonderful recipe that will no doubt become my 'go-to dessert' of summer! Thanks so much for the post!

Apple Muffins
very tasty... I didn't make it with the additional topping as many others suggested -- maybe the next batch... I used half oil / half apple sauce and I doubled the cinnamon... there seemed to be enough apples for my taste... will definitely make again if they freeze well...

Mexican Rice
I needed to use up some wild rice and ground beef so I went looking for a recipe that seemed quick and easy. I didn't have all the ingredients -- no bell pepper, no corn, no cilantro -- so I just used those that I had on hand... Since everything was leftover, I simply put the beef in the skillet, added the onion, and then dumped in the diced tomatoes and salsa, and then added the spices and finished with the cooked rice. Oh, I also substituted 1 tbsp crushed chillies for chili powder (which may have been a bit more than was necessary as it was quite hot)... In spite of all these 'adjustments,' there is no doubt that this recipe is a keeper! Even my 3 year old thought it was YUMMY (albeit a bit spicy for tender taste buds)...
