Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo - Simple version

These are great. I made a few accomodations for speed and ingredients on hand. The chipotle mayo is very good. For those that don't like the heat just don't put extra on the tortilla. I made it with corn tortillas quickly heated on a griddle. I also used frozen lightly breaded halibut that I baked. The lime honey didn't add much with the frozen fish but recommend finding a way to include more lime flavor. I didn't have cilantro so I added a low-fat Trader Joes cilantro dressing to the slaw. It took 20 minutes with these modifications. Can't wait to have them again.

Parmesan and Broccoli Stuffed Potatoes

Very nice. I made a few modifications... I used new potatoes with thin skins. I slit the skins with a knife and then mashed them coarsely with the skins on. For the sauce. Simmer 2T butter and 1T minced garlic in microwave while potatoes are cooking. I added a little milk as well freshly grated parmesan making about 1/3 cup of sauce. Top with grated parmesan and baked for 30 minutes in a souffle dish. (any small casserole will do)

High Flavor Bran Bread

This is both the highest whole wheat content bread we've every made and the best tasting bread maker bread. It REALLY is high rise. Very hearty. More of a munching bread than a sandwich loaf. Modified it by using a sourdough sponge and reducing the yeast.
