I used gluten free all purpose flour, 2 cups cornmeal instead of 1-1/2 cups, 1/2 cup sugar (as I don't like too sweet a taste) and cooked for 30 min. I too beat the mixture for 5 minutes. It came out perfectly.

Classic Peanut Butter Cookies

delicious. Changed heat to 350 degrees F as first batch were too brown on the bottom. Added 1/2 cup flour and 1/2 cup peanut butter in addition to recipe.
