Dani's Butt Kickin' Bloody Mary Mix

pretty butt kickin' good! If you lay off the hot sauce, you end up with a great mild bloody mix as well (even with the horseradish) - that is in case you have guests that are wimps.

Fluffy Pancakes

Followed the recipe to a "T" and they came out perfect! Best pancakes I have ever made in my life - finally found a keeper. They are thick and fluffy with the perfect ratio of salt and sugar (like a cornbread). Tossed in some blueberries in the second round and couldn't be happier with the results.

So good! For some reason its heavy on the cumin (and I love cumin!) I would use less next time. But still a VERY tasty dish - a must in your recipe box :)

Sweet and Sour Sauce I

A simple easy sauce to go with your favorite stir fry ingredients. I added a small garlic clove and threw in fresh cilantro at the end before serving. We don't buy ketchup so I used hot BBQ sauce - turned out great (but remember that BBQ has vinegar already in it so plan accordingly). Tomato paste also works just as good. I also substitute honey for the sugar from time to time.

Vegetarian Chickpea Sandwich Filling

Cottage Cheese Chicken Enchiladas

This is a great recipe! It does sound weird but it is really good. We don't eat much meat so we used 1 large can of black beans (drained) instead of chicken and it tasted wonderful! I cut the cottage cheese and shredded cheese in half (1 cup each vs. two cups each) and I felt it was a good cheese mixture to bean mixture ratio. I also used fat free plain yogurt instead of sour cream but still used 1/2 cup (Since I used the canned beans I didn’t add the salt FYI)

Lentils And Spinach

It’s a good base recipe but I had to add a lot more flavor to mine (~ 1 tsp. curry paste, 1 tsp. turmeric, 2 tsp. tomato paste, a few vegetable bouillon cubes) to flavor it up a bit. I will make this again but will continue to add the extra ingredients. I would suggest for people trying this out to following the recipe and give it a taste test mid way through to see how you feel about it and then add any extras if you feel it’s needed.

Spinach Enchiladas

This turned out really good. Next time we would add more protein - like chicken or black beans to this dish to give it more volume. Extra sautéed veggies (like zucchini or maybe peppers) might be good too.

Mint Chutney

This is a great recipe. I don't have a food processer, just finely chopped up everything - it was a little chunky but I'm fine with chunky. We eat it with our naan bread and Indian dishes (coconut tomato curry type dishes are the best with this chutney) but also good with crackers and cream cheese, pita bread and hummus or tortilla chips.

Easy Gravy

Oh my god, this was sooo easy to make and it is surprisingly really really good! I took the precaution of one reviewer saying it was too salty and only added one tablespoon of soy sauce and it came out perfect. I also didn't have miso paste so just used the flour, broth, soy sauce and onion powder and it was just fine!
