My teenaged daughter loves these as much as I do. We split a tray when we make them and they don't last long between us. I've never had any leftovers so I can't speak to how well they keep.
Only thing I changed was that I use a sprayer for the olive oil. It coats more evenly and I avoid limp spots. I also recommend filling the tray so that there isn't any open areas. And, place the kale curls up. I bake them for exactly 10 minutes and never get soggy or burnt chips.
I also recommend trying different seasonings. I like non-salt seasoning mixes and they taste great on these chips.
