Jumbo Dark Chocolate Cookies

Gooey Butter Cookies

This was a super easy cookie, and so yummy. My husband is already making plans for all the different verisons he wants me to make. For my first one I used the the Yellow Butter cake mix & chilled the dough for 2 hours before baking. They were not too sweet either which I was a bit worried about. I am looking forward to trying different flavors.

Polish Style Lasagna

This was fantastic. My husband and son said it was just like eating a perogie. I did make the cream cheese the chive and onion flavor and add a 1/2 cup of sour cream to the potatoes to add a bit of bit to the flavor. I add potatoes to the top 3rd layer of pasta and then added sharp cheddar on top. Served it with some homemade good ole-fashioned polish sausage. My husband was in high heaven.

Homemade Mac and Cheese

This was fantastic. Did it for Easter dinner and doubled the recipe. There was not a bit left. I did switch out the parm cheese for asiago and it was fantastic. That was the only change I made. I followed the directions exactly with no issues. It made everyone extremely happy, just like a good Mac & Cheese is supposed to.

Bacon Wrapped Pork Chops

This was really good. I did tweak it. I used 1" thick chops. I seasoned the chops with a sprinkling of cumin & garlic powder and then seared them in the bacon grease as suggested by other reviewers. I wrapped them in the slightly pre-cooked bacon and put them in at 375 for 30 min. The last 10 min I pulled them out and sprinkled a shredded cheese mix on top. My husband was unsure when he saw me prepping everything, but in the end he went back for seconds.

Zuppa Toscana

My husband loves this soup. He said it was really close to the one he normally gets from Olive Garden. A loaf of Sourdough bread was the perfect side for it.

Crab-Stuffed Mushrooms

This was a good started recipe for me. I ended up adding shirmp, and then some breadcrumbs to hold it together. I reccommend some Old Bay seasoning too. It gives it that seafood flavor that I felt was missing.

Simple Baked Apples

I did this for Thanksgiving and got lots of compliments. I prepped the apples the night before with the sugar and seasonings and stored them in the fridge in zip lock bags. In the morning I put them in my crockpot with half milk, half apple cider on low. 4 hrs later they were fantastic. Served them as a stand alone dish with fresh made whip cream as a topping.

Cajun Potato Soup

This was an amazing soup. My 11 year-old raved and made “Mmmmmm” sounds while eating. It has quite a bit of prep, but not unmanageable. It let it simmer longer than stated and made it a bit thicker as it is not a really thick soup and I like my creamy soups to be on thicker side. I did use the andouille in the recipe, and it added a lot of flavor. The next time I make it I am going to try Italian sausage.
