Chicken Murphy II

I had leftover chicken and potatoes and decided to give this recipe a try. It was just ok. I did use a cherry pepper instead of jalepeno and a yellow pepper, not green. The boys enjoyed all the meat but the sauce was only passable. Should have put the wine in my glass instead :)

Dishpan Cookies II

Sooo good. I made these for a potluck and they were a sellout. This is a big recipe and made 60 large cookies, but looks easy to 1/2. I used butter and had a different flake cereal, but these are now my favorite chocolate chip/oatmeal type cookie. Yum Yum!

No Crust Coconut Pie

This was just okay. If you like rice pudding, this has a similar taste only with coconut. The "crust" results from a settling of the flour on the bottom of the pan that does not brown or become crispy or solid at all. Taste was ok. I followed the suggestion of others and only used 3 eggs. Good part was that it was quick, used common ingredients and was easy to make and serve, but I think there are better ways to use up coconut.

Chewy Chocolate Chip Oatmeal Cookies

These were okay but really needed the fridge time to hold together and not get too flat in the oven. Nice buttery taste but not much 'body' to the dough. More like sweet buttery oats but maybe that is what the baker was looking for.

Delicious. Big, fluffy, tasty, cheap and easy. Definitely needs the salt. Only needed 30 minutes total in my oven. update..made a second time without the dab of butter (pre-melted in the oven) and they did not turn out well, too doughy thick and tough. The dab of melted butter seemed to make a big difference.

Oatmeal Raisin Cookies I

Very tasty and my friends loved them. Changes I made was to decrease the sugar amount to 1/2 cup brown and to add 1/2 cup of coconut.

Salisbury Steak

Good basic recipe. I added a can of mushroom/garlic soup as suggested by some and the sauce/gravy was delicious. I think next time I may not bother with the condensed onion soup and may just chop in a bit of onion to help decrease the salt the still keep the flavour. Good supper and easy!

Cream Puff Cake

Creamy and delicious! My addition because I didn't have chocolate sauce was to chop up a chocolate bar and sprinkle on the crust right out of the oven and then let it cool. I can't wait to try with different flavours of pudding and fruit. Yummm!

Moist and Chewy Peanut Butter Cookies

I like extra peanut taste so increased the peanut butter to 1 cup and reduced the white sugar to 1/4. Bake for 8 minutes at 350 for a softer, chewy cookie or for 9 minutes for a crunchier cookie. Delicious!

English Walnut Pie

I followed this recipe, but added a 1/4 cup evaporated milk and 1 tbsp of flour, just to change the texture of the filling. Very easy and delicious.
