Beef Stroganoff III

Like others, I made a few changes. Marinated the steak pieces in red wine (old vine Zin) for 6 hours. Prior to pan frying in butter (YUM!) I dipped the steak pieces in a combination of flour, pepper, and salt. Then fried in batches so as not to crowd the pan. I still added white wine, beef stock,sour cream and a little flour to the sauce. This is one of my all time FAVORITE dinners! Thanks for a great base recipe :)

Easy Pineapple Cake

The reason this cake calls for the same amount of sugar as flour is because there is no fat. I used less sugar (1 1/2 cups), but added coconut oil (1/2 cup) and it turned out great!

Mexican Rice III

This is AMAZING rice! We had it with fajitas and guacamole! Since corn is in season, and extremely cheap in the grocery stores, I cut off the kernals of 2 cobs and added them in with the other veggies. YUMMY!!!

I did what several other posters said and omitted the water and added the juice from 2 more limes. I also didn't use the salt and just added more soy sauce (about 1/3 cup total).

Easy Sugar Cookies

I should have done what I USUALLY do with sugar cookie dough, which is chill it for a day or at the very least a few hours in the fridge before rolling out and using. The cookies bloated up twice their size!! Its possible the cookie cutters I used were far too large and had too many awkward angles. Regardless, the taste can't be beat...I wouldn't substitute the butter with margarine or any other type of oil created in a lab like some posters did.

Texas Glazed Pecans

The only thing I changed was using 1/2 cup white sugar and 1/2 cup brown sugar instead of all white. The brown sugar makes them ultra tasty :)

Mom's Country Gravy

Like other reviewers said...you really need to use sausage or bacon drippings instead of vegetable oil. If you have neither, use butter! I also used TONS more salt and pepper than called for in the recipe, otherwise it is just too bland.

Delicious Pancakes

This is a great twist on the classic pancake recipe that can get old fast :) I love the texture the oatmeal imparts, yet they still stay light and fluffy. My kids and I love them! Thanks!

Downeast Maine Pumpkin Bread

Great recipe...I read all the substitutions and changes people made and wanted to make a lower fat version too, but we were out of apple sauce. I did have two over-ripe pears sitting on the counter though, so I peeled them and mashed them...viola! My substitution to a substitution. So I used one stick of butter (1/2 cup) and the two mashed pears instead of the 1 cup of oil called for. Delish!
