Easy Corn Pudding
Fast & delicious! I didn't read the reviews prior to making this dish, so I pretty much made as it is written. I debated as to whether or not to keep the liquid from the corn kernels since that wasn't mentioned, but glad I ended up using it in the recipe. I only made a couple adjustments so it would marry up well with my main Mexican chicken dish. I added chopped chili peppers and a pinch of Splenda - OMG - delicious! Thank you for sharing such a terrific recipe!

Quick and Easy Mexican Chicken
It is very difficult for me to find time to cook on a weekend, but I decided to give this recipe a try since it appears to be a "quick" recipe. The name holds true - quick and easy! Not only that, but so tasty, I had no leftovers in my house! I didn't have thighs, so pounded out 4 chicken breast and cut each of them in half. I agree, that a pinch wasn't enough, but mixed the salt, pepper, cumin & freshly minced garlic in a bowl - rubbed generously into chicken before browning. When transferring to the baking pan, I added a little extra chopped chili's in with the salsa, as well as some sauteed onions & yellow bell pepper. Everything else was as the recipe called for. This was crazy good! Served with the Easy Corn Pudding found on this website too. Thanks for sharing a recipe that was delicious and quick to make!

Sweet, Sticky and Spicy Chicken
I simply loved this recipe!!!! Thanks for sharing! I too, made a couple adjustments. I dredged my chicken in seasoned flour (w/ground black pepper and a little salt). While browning the chicken, in a different pan, I sauteed thinly sliced sweet onion, freshly chopped asparagus & thinly sliced red & yellow bell peppers. I added the sauteed veggies to the chicken, then added the sauce which was made same as recipe called for (except I didn't have fresh ginger, so used ground ginger) and this was a hit in this household! The only other adjustment was I decreased the amount of hot sauce, but added a teaspoon of crushed red pepper flakes. This is one of my favorites now! Thanks again for sharing!
