Baked Penne with Italian Sausage

This is a very quick and easy recipe to put together that is hearty and satisfying and surpringly flavourful. I did not take the sausages out of their casings and simply fried them up with the onions and then sliced them into 1/4 inch medallions. Of course,you could add whatever else you wanted from the fridge - mushrooms, bell pepper - but honestly, this is very good as written and I appreciated having a simple but stick-to-your-ribs way to use up that otherwise-boring package of spicy sausages!

Meatball Orzo Soup

Different! Easy! Delicious! I used a handful of frozen spinach instead of the zucchini. This dish seems exotic, in spite of it's simple ingredients and the ease with which it's put together.

Sweet Corn Bread

How nice to have an easy recipe on hand for all those times when dinner rolls is an afterthought and I don't feel like running to the store again. Don't worry if the dough seems a bit stiff - you don't want to overmix it anyway. I recently made this with Baked Seafood au Gratin from this site - a match made in Heaven.

Dark Chocolate Cherry Fudge

First of all - make sure that you use a large pot! I used a medium-sized one which seemed to have plenty of room - until I added the remaining ingredients and had trouble stirring it effectively, leaving me with a pot full of chunky, stiff goo. I thought that perhaps next time I would melt the chocolate before adding it to the sugar/milk. In any case, the result did have nice flavours (I used craisins, glace cherries and nuts), but the texture of the fudge is granular and the overall taste is overly sweet. I guess in the end I prefer my old standby recipe for Sweet Marie bars - a much easier and creamy concoction of chocolate, peanutbutter and Rice Krispies.

Delectable Marinated Chicken

Oily marinade combined with fatty meat caused the BBQ to keep flaring up, resulting in burnt chicken. Won't make it again.

Cuban Grilled Chicken Salad

Unique and hearty. However, I found the dressing it calls for isn't a great match for the ingredients. (And boy, did that garlic keep repeating on me!). I would make again but would use perhaps a raspberry vinaigrette or a balsamic dressing. We added cheese (parmesan petals on one, crumbled feta for the other). I think a sprinkling of any kind of nuts would also be lovely.

Chicken and Peppers with Balsamic Vinegar

Beef Barley Soup

Used leftover roast beef and cooked for 45 minutes, having used regular barley. I used half beef broth and half of the gravy/stock from my roast. This was most EXCELLENT and netted me sufficient adoration from hubs. Thank you for posting!

Spinach Mushroom Quiche

Excellent quiche. Made in my Pampered Chef Deep Dish Baker - one Grand Crescent roll package covered the bottom and sides of this perfectly. Didn't have the soup mix so just used 1/2 tsp each of dried mustard, salt & pepper. Baked for 40 minutes to perfection. An easy, satisfying dinner served with buttered toast. Thanks Mindy!

Bacon 'n' Egg Bundles

Very cute! However, they seemed unsubstantial somehow on their own (with toast). I did save the recipe for future use, though, as I feel that they would make an attractive addition to a full buffet spread "for company." I used silicone pods, which made popping them out easy. Cranked the temp to 400 for the last half of cooking. (We were hungry!). Thank you for this clever recipe.

Bow-Tie Pasta Salad

Colourful and tasty! I have been making the same pasta salad recipe for years (the one on the mayonnaise jar), so was a little skeptical. But this one is fantastic - and it stays creamy the next day. Best of all my husband, who has always merely tolerated pasta salads, LOVES this!
