Spinach Deviled Eggs

My family really liked these. My only problem was with the spinach- it was too stringy. Next time I will chop it in a food processor before adding it to the other ingredients. I also used bacon bits from a jar and it was so much easier.

Boilermaker Tailgate Chili

I made this exactly as it says. I made it a day in advance and put the whole pan in the fridge overnight thinking the taste woud be better the 2nd day. I highly recommend it! It was even better the 3rd day. We all put cheese, sour cream and fritos on it the 1st time but all agreed it tasted better without.

Baked Stuffed Apple

I used a rather large apple and the stuffing didn't come close to filling it. The flavor was just ok. I did use weight watchers cream cheese and raisins so maybe that made a difference. It was also hard to eat- having to cut it up and try to get bites with stuff on them.

Moroccan-Style Stuffed Acorn Squash

Followed the directions exactly- It is so good! The squash took about 40 minutes to get soft and I had to add just a little water to the celery mixture as it started to dry out before the veggies were soft (I ended up covering the pan to speed it up). Next time I am going to add some extra raisins.

Slow Cooker Latin Chicken

Just ok. My husband liked it better than I did. I added corn and twice the liquids as reviewers suggested and I would do that again if I were to make it again- which I won't. It just wasn't quite right.

French Toast Fingers

Love this idea! I did add a little cinnamon & vanilla to the egg mixture. I made one with strawberry & cream cheese (weight watchers), one with cream cheese (ww) and honey and one with peanut butter. The strawberry cream won hands down! The only reason I didn't rate it a 5 is because they were a little soggy. By the 3rd round I barely dipped them in the egg mixture and this seemd to help. Next time, I think I might just brush the mixture on to avoid it getting on the sides.

Asparagus with Cranberries and Pine Nuts

I took the advice of other reviewers and steamed the asparagus first then cut it into pieces. I used about 1/4 cup nuts to cut down on calories and cooked them with raisins (what I had on hand) before adding the steamed asparagus. I used 1 TB olive oil. It was perfect. The combination of flavors was a great surprise. Delicious!

Spiced Pumpkin Seeds

If you enjoy the texture of pumpkin seeds, these are really good. I followed the directions as stated. I did start them out in a casserole dish that was too deep. After cooking for an hour they were still really soupy so I poured them onto a cookie sheet and let them bake longer. They turned out great.

Kidney Bean Tuna Salad

I used a whole can of beans and 10 oz. of tuna. The dill taste was a little too strong for me so I will cut that down a little next time. I left out the olives (don't like them) and the cheese (to cut calories). I only used 1 TB of olive oil and it was plenty. I will definately make this again.

Melt-In-Your-Mouth Meat Loaf

I used Venison and only 1/4 cup bread crumbs to cut calories. I did add extra seasonings as recommended by others. The topping didn't really do anything for it. I might make it again because it was so easy but I will skip the topping.

Kielbasa and Kidney Beans

I needed to use some Turkey Kielbasa I had in the fridge and I am always looking for recipes that use beans instead of rice or potatoes. This was pretty good. Not out of this world but I will likely make it again.

Margarita Salmon

I used regular honey b/c that is what I had on hand. I just didn't get this. Maybe the flavor was odd due to the honey. I tried to use a foil bag as others suggested but the salmon was still cold at the end of the cooking time so I ditched the bag and cooked them in a dish. We ate them but I will not be making them again.

Magic Peanut Butter Middles

I added 1 TB sour cream to the chocolate batter as others suggested and the consistency was perfect. I made the filling first and let the balls chill while I made the batter- this is a must. The filling gets rather gooey after being at room temp for a while. I used a small cookie scoop to make the PB balls. I used the same scoop for the batter- rolled it into a ball and then flattened it to put the ball inside. I used a little extra to fill in any holes in the batter. I ran out of balls and had enough batter for probably 10 more cookies. Bummer. Next time I will use 1 cup PB and 1 cup conf sugar. Great recipe!

Double Layer Chocolate Peanut Butter Pie

Outstanding! Made this for Thanksgiving and it was wonderful. I did not cut down the cream cheese, thankfully, because it was perfect. I did use 1 cup millk (skim) and 1 cup half-n-half. I put a layer of chopped reeses cups in between the PB and choc layers. I was a little worried about the choc layer b/c it seemed so lumpy when I was trying to stir it up but it turned out great. I used a large graham cracker crust and topped it with chopped reeses cups. Will definately make again soon!!

Used turkey sausage, low fat sour cream and fat free cheese. It was good, but not outstanding. Will likely make again but will add red peppers and broccoli- whatever veggies I have on hand. Quick and easy gave it the 4th star.

Coconut Macaroons III

I followed the advice of other reviewers and cooked them longer than stated- about 24 minutes- b/c it took that long for them to look a little browned. Not sure if they were overcooked or what but they were just ok. I drizzeled them with melted chocolate and they look cool but the flavor was average. I doubt I will make these again.

Baked Teriyaki Chicken

I followed the davice of others and doubled the sauce except I used 1/2 cup suagr and 1/4 cup brown sugar and only 3/4 cup soy sauce. I added a little extra garlic. I cooked 4 boneless skinless breasts with all the sauce at 375 for 25 minutes covered with foil. I then took the foil off, turned the pieces over and brushed with sauce and cooked uncovered for an additional 15 minutes, They turned out better than I expected. I will definitely make these again.

Sausage Smothered in Red Cabbage

Better than I expected! I followed the advice of others and cut the salt down to 1 tsp which was perfect- any more and it would have been way too salty. I used 1 TB olive oil in place of the butter and I used turkey kielbasa to cut calories. I softened the onion in the oil in a large pot 1st then added the remaining ingredients, except for the apple which I added the last 10 minutes. I also added a little caraway seed. The whole family loved this! It is very diet friendly if you use turkey sausage and olive oil. Husband would have liked double the sausage but I thought it was just right.

Mint Chocolate Chip Cookies
