Chex® Pumpkin Pie Crunch

I doubled the amount of pumpkin pie spice as suggested. I also used 10 oz pecans. I used a mixture of Honey Nut Chex, Cinnamon Toast Crunch and Golden Grahams which I highly recommend! This was so awesome the 1st day and then it was just kind of average the next day. Not sure why......

Sugar Coated Pecans

This was my 1st go at making this kind of nut mix. It turned out pretty great. I used 2 egg whites as others suggested which was fine....just not sure it was necessary. I'm not giving 5 stars b/c they were just missing something... I'm thinking brown sugar. Next time I make something like this I will likely find a recipe that calls for brown sugar. Edit 12/12- made these a 2nd time and used 1/4 cup brown sugar in place of 1/4 cup of the white sugar- excellent! An easy 5 stars when brown sugar is added. Used just 1 egg white this time too.

Gourmet Sweet Potato Classic

Not as good as I was hoping. I read tons of reviews and considered reducing the amount of sugar used but decided to make it as written. The problem for my family was not the amount of sugar at all. The flavor was just average. Not sure what went wrong but I have made much better tasting sweet potato casseroles. Disappointed this Thanksgiving. We had 10 adults and I'd bet not even 1/4 of the 9X13 dish of potatoes was gone by the end of the meal. Had tons of leftovers of course but eventually threw most of them out. Just not great.

Ranch Chicken Tacos

I used Light Ranch and only 2 TB fat free sour cream (I was short) for the sauce. I didn't use all of the remaining seasoning in the chicken- just eyeballed it until it looked good and seasoned and I had to add a little water to the chicken just to keep it moist. The flavor was probably only 4 stars but since it was so easy I gave it the 5th star. Hubs and the kiddo assembled theirs on flatout bread and I had mine on a spinach salad. Everyone was happy and healthy. Thanks!

Apple Crisp Cups

These are so time consuming and about the same in flavor as any other apple crisp. I like the idea of tiny finger type treats like this but the crust part was so hard to form in the pan I'm not so sure it's worth it. I did as others suggested and used a food processer to mix the flour, sugar, cinn, nutmeg and butter together before adding the oats- much easier! They were good- probably better with a little powdered sugar drizzle over the top. Maybe my family is just too into chocolate to really love these. I suppose I will only make them again if we have guests that LOVE apple crisp and then I will probably try to make them in regular size muffin pans to save time.

Catherine's Spicy Chicken Soup

I'm not so sure about this one. I had high hopes because of all the great reviews but it turned out just average for us. I think with most soups if you add cheese, sour cream and fritos or tortilla chips to the top it greatly improves the flavor. I was looking for a healthier type of soup and without all the extras on top this just didn't cut it. I will not be making this one again.

Southwest White Chicken Chili

I sprayed my pan with Pam instead of using veg oil. I cooked the onion and pepper with the seasonings until tender. I added the remaining ingredients including a packet of taco seasoning and kidney beans instead of the white beans. I used the meat from a precooked rotisserie chicken to save time. I also added a can of Rotel tomatoes. It turned out great. Will definitely make this again with the above changes.

Peanut Butter Fingers III

I probably would have given these 3 star but hubs liked them a lot so 4 stars it is. I used creamy PB as that is what we prefer. I also used half dark choc chips and half semi sweet choc chips. They were really easy and quick. The key must be to remove the pan from heat right after the syrup starts to boil to avoid rock-hard bars. Anyway, I might make these again since they are fast and easy but would definitely stick to a more traditional PB bar made with powdered sugar for sharing.

Turkey Veggie Meatloaf Cups

I'm still trying to figure out why these got so many great reviews. They are very healthy and easy. Great way to get extra veggies. The flavor was just ok. I won't these again. My 5 year old wouldn't eat hers- my 1 year old actually ate about a half of one. Hubs ate a couple but sure didn't enjoy it. I had leftovers in the fridge for 5 days! I eventually ate the rest- tolerable but not great. Something is missing. The flavor is just not quite right. I had high hopes since these are so diet friendly.

Whole Wheat Pumpkin-Applesauce Muffins

For being 'healthy' muffins these were just ok. I wasn't expecting much so I was maybe a bit pleased but not impressed enough to make them again. As others suggested I did not use any oil- just used twice the amount of pumpkin. I used splenda sugars and twice the raisins since I didn't have pecans. I added about 2 TB flax seed. I think they would be better with chocolate chips- I know it takes away from the 'healthy' aspect but a few dark choc chips won't hurt- maybe would have been worth another star.

Apple Squares

I had high hopes for these but they were just average for us. Made them as stated except I used twice the amount of apples and went a little skimpy when measuring the sugars, as suggested by others. They were really hard to spread in the pan and turned out pretty thin. The topping was way too much and I even left some in the bowl because it looked like too much. I did drizzle them with a basic powdered sugar icing (which added a nice touch). I sent these to a potluck without trying them, based on the great reviews, and I am so regretful now. With all the great bar recipes out there, I will definitely not be making these again.

Debdoozie's Blue Ribbon Chili

I used Picante sauce as suggested by the woman who submitted this recipe. I used 1 can dark kidney beans and 1 can seasoned black beans (both with their juices) as that is what I had on hand. After I browned the meat with onion I added everything to the crockpot. I had to add another whole packet of chili seasoning half way through cooking as it was pretty bland. The final result was really good. Will likely make again.

Thai Cucumber Salad

I have made this probably 10 times in the last month. We LOVE it. I use splenda to cut calories. I leave the jalapenos out- they just don't do anything for this. I add chopped red onion and use lots of cilantro. We just sprinkle a few peanuts on each serving when we are ready to eat. Cocktail peanuts are also a must!

Iced Mocha Fusion Shake

Probably more like 4 stars but this is the best at home frozen coffee drink I have found and I have been searching a long time! I think I will try it with some coffee ice cubes in place of plain ice cubes to give it more of a coffee taste.

Easy Cream Cheese Danish

This turned out pretty good. Probably not Christmas morning worthy, but good. I spread sugar free strawberry preserves on half. I used light cream cheese and splenda to cut down on calories. Maybe full fat cream cheese would give it the extra star? I will probably make it again and put lines of strawberry preserves on top of the cream cheese mixture as spreading it all around made the top layer slide off very easily- making a very messy pastry. The fam liked it with the preserves better than the plain cream cheese.

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

Used Venison steaks since that is what I had. These are good and spicy. Will probably make again. Sprayed with olive oil instead of using veg oil. Added red pepper and onion to the kabobs and highly recommend this addition
