Award Winning Soft Chocolate Chip Cookies

Wow, I'm impressed. I've been using the same choc chip cookie recipe for years (Mrs Fields cookies). People have always raved about my cccookies but I thought I would try someting different- the use of pudding and all the rave reviews intrigued me. I read well over 100 reviews and this is what I did based on those- increased to 1 1/2 TB vanilla, added 3/4 tsp salt, used about 1/3 cup less flour, Mixed the sugars really well 1st then added very soft but not melted butter before adding pudding a little at a time, cooked on parchment paper allowing the pan to cool between batches by wiping with cold wet washcloths. II used an electric mixer for the entire recipe- saved my arms for sure. I used a big cookie scoop- about 1 1/2 TBs and cooked for 12 min allowing to cool 2 min on the pan before moving to a wire rack. The pudding threw me off at 1st because I bought the fat free kind but then the ounces didn't add up so I ran back tot he store, bought the regukar kind- 2 small boxes- and presto- awesome cookies! Also, these cookies do not lack in choc chips! I loved the amount. I skipped the walnuts b/c nuts in a choc chip cookie just don't belong :) The whole family was raving about these- in fact, I just had to take a dozen out of my freezer for grandpa who was demanding more!

Cherry Snowballs

I had high hopes for these but they were just average. I used cherry juice instead of water and would do that again. I would also try adding quite a bit of powdered sugar to the dough and maybe cherry juice to the coating. Definitely grind your coconut before rolling. The dough was pretty easy to work with and I used as little of the dough as possible around each cherry. Not so sure this one is worth the effort. Maybe just making a ball that you flatten in the middle to hold a cherry and then spread with the coating stuff and top with cocnut. Hmmmmmm, yes I think THAT might be worth it...........

Mother-In-Law Eggs

Too sweet but still pretty good. Next time I'll try half the sugar. I always use fat free plain yogurt in place of mayo- turned out well in this one!

Buffalo Chicken Chili

This was pretty good chili for a change. Not too spicy. The only change i made was to use rotel tomatoes because that is all I had on hand. Will make again as a healthy chicken chili.

Chocolate-Covered Cherry Cookies

These were pretty good- made exactly as stated. Next time i might try to add a bit of cherry juice to the batteras they really weren't full of cherry flavor at all. I made the balls rather small so the cherry inside wouldn't get too lost in all that dough. These were better the 2nd day after sitting in a container on the counter. I only baked for the minimum time. The frosting on the top was wonderful- easy to work with and it was thick enough that it set really well on the little cookie balls. I will make again as they are pretty cute little things! I will also be using the frosting for other things too :)

Baked Soy Lemon Chops

I only marinaded for 45 minutes and then I cooked the chops in the marinade as others suggested. The family just wasn't sure about this one- kind of bland and tough. Will not make again.

Baked Acorn Squash with Apricot Preserves

We realy prefer the brown sugar/butter kind of squash in this house. This was kind of odd tasting. Bummer too as I was hoping to find another way to prepare acorn squash.

Di's Delicious Deluxe Deviled Eggs

I used green onion as that is what I had on hand. I substituted fat free plain yogurt for the mayo to cut down on calories. These were really just ok for us. Pretty bland. Probably 2 stars for taste but I added an extra to be fair since I did substitute a bit. Oh well, my search for the perfect deviled egg continues.....

Peanut Butter Mallow Candy

I really like the idea of these but the coconut just doesn't seem to belong. I added extra peanuts. Next time I will omit the coconut, add twice the peanuts and maybe 1 cup of reeses pieces. Easy and they keep in the fridge well for a couple of weeks.

Chocolate Brittle Surprise

Awesome! Very easy too!! I dipped each cracker in the sugar mixture to assure even coating. I used 1 cup semi sweet and 1 cup milk choc chips. Watch closely in the oven to be sure they don't overcook. These hold up reallly well in the fridge for a couple weeks. I tried a second batch with graham crackers- NO WAY! The saltines are sooooo much better.

Peanut Butter and Cream Brownies

Made this for a family Christmas party and it was a hit. I used Ghiradeli brownie mix- yum! Be sure your cream cheese is at room temp before beating. I added chopped reeses cups on top and drizzzled with hot fudge and caramel- beautiful. I have a 10 in springform pan so I had to reduce cooking temp considerably- be sure not to overcook the brownies- they really make the dessert!

Apricot Brown Sugar Ham

I doubled the sauce and brushed it on throughout the cooking time. Absolutely delicious! Next time I might just brush most of the sauce on and let it cook in foil without disruption. Made this for Christmas dinner- outstanding! We will definitely use this recipe for future ham in this house!

Mini Cheesecakes I

I don't think I used enough crust for these. They turned out pretty tasty but next time I will be sure to use a full 1/2 tsp of the wafers. Next time I think I will use half oreos for the crust and mix some into half the batter too, That way there will be 2 different cheesecakes to try. I think the flavor alone is worthy of 3 stars but the ease of making these gave them the 4th star.

Slow Cooker Roast Beef

Wow this had great flavor. Next time I make this I will only use 1 tsp pepper as it was a bit peppery for the kids. I cooked for 7 hours the 1st day, put the crock in the fridge overnight, spooned the fat out in the morning and added carrots and cooked another 7 hours. So easy and delicious. For some reason the carrots were outstanding- maybe a bit salty but still great. If I had low sodium soy sauce I would use that next time but wouldn't buy it specifically for this- regular is fine.

Pineapple Pretzel Fluff

Pleasantly surprised by this one! Definitely increase the pretzels to 2 cups. I tried it with only 1 cup as stated and i could barely spread it in the pan. I waited until just before serving to add the pretzels to the cream cheese mixture as suggested. Thank goodness because the pretzels get soggy pretty quickly. This is more of a one time dish- not great for leftovers. I ate a bit of it here and there for 2 days after I made it and it was still good but not anywhere near as delicious as it was the 1st day.

Slow Cooker Cilantro Lime Chicken

Made as written except I added about three times more cilantro- never could taste it though! It was just ok. Definitely good enough to eat but I won't make it again. It is really easy and fast.

Awesome and Easy Creamy Corn Casserole

Doubled it and had to cook for about 1 hour in a 9X13 dish. Delisious and easy. This is the only left over I had to save after the clean out of the fridge. I guess my family doesn't love corn casserole as there was tons left over but I suppose that with all the Thnaksgiving food on the table, the corn casserole is just not that exciting. It would likely steal the show on a random work night though!

Chex® Pumpkin Pie Crunch

I doubled the amount of pumpkin pie spice as suggested. I also used 10 oz pecans. I used a mixture of Honey Nut Chex, Cinnamon Toast Crunch and Golden Grahams which I highly recommend! This was so awesome the 1st day and then it was just kind of average the next day. Not sure why......
