Crunchy Peanut Butter Balls

Awesome. used almond bark instead of choc chips for the coating. I can see how people would like to use more rice krispies- it could go either way. It doesn't really matter- they are easy and excellent! I melted peanut butter chips and drizzled over the top of the coated balls. They looked great and tasted better. Super easy too! They were a hit with the whole family and they freeze well :)

Broccoli Salad with Margarita Dressing

I usually avoid trying any recipe with less than 10 reviews but this one sounded so good. I used cherry tomatoes and omitted the mushrooms (yuck) and used about 1/2 cup fresh cilantro (we LOVE it). The smell of the dressing after I blended it made me nervous- I did not have high hopes b/c it just didn't smell good. I left the romaine out (didn't want it to get soggy- highly recommend leaving it out until ready to eat) and let the broccoli and other ing marinade for about an hour and a half. I filled each bowl about half full of romaine and then filled the rest of the bowl with the broccoli mixture and mixed it all up. I had every intention of adding some parmesan cheese but completely forgot and I am so glad I did b/c this was fantastic even without cheese! I am always counting calories and I could enjoy a large bowl of this with no worries at all AND it is really filling. The 2nd day was even better. I cannot express how great this was! One word of caution- go easy on the onion- Hubs thought it was a bit too strong... I didn't mind at all though... maybe personal preference. I will definitely be making this for our next 'company for dinner'. I just hope we can eat this outside- what a great warm weather salad. Wow, really, you have to try this.

Fish Tacos

used fat free plain yogurt and light mayo for the sauce. I added a full 3 TB lime juice and omitted the jalapenos (for the kids) and the capers (didn't have any). I'm rating this one 4 stars for the sauce alone as I baked the cod rather than frying it (calories). I'm sure fried fish would be delicious with the sauce. I sprinkled frozen cod with chili powder, salt and pepper and poured a bit of lime juice over the top (before the seasoning). Good, not great. Probably prefer the cod on its own unless frying.

Amazing Spicy Grilled Shrimp

Good but not 5 stars good. Used chile garlic sauce in place of the paste as that is what I had. I had to use dried parsley. Might try again with fresh parsley. Probably worthy of a second try.

Marinated Grilled Shrimp

I really wanted to find that 5 star marinade for shrimp but this just wasn't it. With all the rave reviews I thought for sure this would end my search for the perfect grilled shrimp. I made exactly as stated except I used dried basil as that is what I had. I also added 1/2 TB of chili garlic sauce as others suggested. It turned out a little too spicy for the kiddos. I made twice the sauce and then extra for basting. Turns out, there is just no time to baste so that was a waste. Lesson learned. Anyway, I might try these again if I end up with fresh basil around the house.

Strawberry Dream Cake I

Just not quite a 5 star cake. Close though. I used strawberry cream cheese and added 1tsp strawberry extract to the cake mix. I only used 3egg whites as that is what the box called for. Next time I will not purée the strawberries as I think little chunks throughout the cke would be great. The frosting was good. I didn't have any problems with it being to thin. I just blended the cream cheese first and let it all sit I the fridge for a few hours before adding the col whip. I put a layer of sliced strawberries in between the layers of cake along with a layer of frosting. Made for. Nice presentation. I might use more strawberries in the batter next time. Baked at 325 for 34 minutes. I really didn't think it was done but was afraid of overcoming so pulled it out and am thankful I did because although it was very dense it was very moist.

Peanut Butter Noodles

We liked this pretty well. I did not add peanuts and I used a bit of crushed red pepper in place of the paste. I put the sauce over regular whole wheat noodles and stir fry veggies for the kids. Hubs and I had the sauce over chicken and stir fry veggies. I liked it because the kids got their veggies and noodles and the adults enjoyed a healthy alternative.

Lemon-Cream Cheese Cupcakes

Wow! With a few adjustments these turned out great! I used a box of lemon cake mix. I was so hesitant to use only egg whites and just 2 TB oil as the box called for 3 whole eggs and much more oil. I was afraid it would turn out very hard but it was actually so moist! I baked mine at 325 for about 23 minutes in 2 9X9 round cake pans. I made a layer cake and had plenty of icing for the middle layer and to completely cover the cake. I used 1/4 cup lemon juice in the icing and it still didn't seem very lemony so I added a couple dashes of lemon extract and a little extra powdered sugar (as it was very thin to start)- Perfection. I made this for my daughter's 6th b'day- St. Paddy's Day- so I made it all green (cake and icing) with gel food coloring. Everyone raved about the flavor. Will definitely be making this again with the above mentioned adjustments as I don't think white cake mix would make it lemony enough. Also, you really do need to add extra lemon flavor to the icing.

Cookie Salad I

The 1st day the buttermilk flavor was too strong. It seemed to mellow by the 2nd day. It was good if you like whip cream/fruit type salads. I think it might be better which just regular milk- or maybe half buttermilk and half skim. Of all the fruit salad recipes in the world this was just a smidge above average. I like the addition of the cookies but I do think crushed Twix would be better. I doubled the pineapple and used 1 15 oz can oranges. I will double the oranges next time too as there was plenty of the creamy stuff for extra fruit.

Rainbow Clown Cake

I followed the directions on my cake box instead of using what these directions say. I used gel coloring. The colors turned out great! This was really a very easy way to make a fun cake. I did one small round cake and about 10 cupcakes for my son's 2nd b'day. It was a hit b/c of the fun colors. The flavor was good but it is just a box cake so nothing to write home about. The 4th star is for the clever idea :) I might make again for the kids if they want but the adults were needing something a little more adult-like....... you know, like chocolate!

White Cake Frosting I

I did as others suggested and used 1/2 cup shortening and 1/4 cup unsalted butter as I did not have any powdered butter. I did not use the full amount of powdered sugar as it turned pretty thick. I had to add a little milk just so I could smooth it onto the cake to make it look good. This was good but not so awesome that I will try it again.

Firecracker Grilled Alaska Salmon

I used canola oil instead of peanut oil as that is what I had on hand. This turned out pretty good...... a close 2nd behind this site's "Delicious Salmon". I look forward to trying it with the peanut oil next time for sure. Maybe that will be what it takes to bump into 1st place.

Homemade Chewy Granola Bars

Decent. I used applsauce in place of butter and honey in place of the corn syrup. Did not add sunflower or sesame seeds or wheat germ. i did add 2 TB of flax seed instead. It turned out a little to heavy on the honey flavor- my fault since that was my own add in- but still soft and chewy. I loved the choc chips in these and will likely used extra next time. Quick and easy and healthy enough with some modifications. They are not so good that you can't stop eatng them but they are tasty enough to enjoy for breakfast or a quick easy grab snack.

Low Carb Pancake Crepes

I am impressed more by the fact that I can have 'pancakes' without completely blowing my diet. I used lite syrup and whipped cream cheese as that is what I had. I used egg beaters to save a few more calories. I omitted the butter and used Pam instead. I made a couple with mini semi sweet choc chips folded in the middle and a cople with strawberry preserves. I loved the choc chips and the kiddos loved the preserves ones. Will mae again with fat free cream cheese. Don't expect actual pancakes here- more like crepes as the title suggests- but still delicious. I think I will try some with splenda brown sugar in addition to the cinnamon next time.

Chicken Salad with Bacon, Lettuce, and Tomato

Nat's Shrimp and Veggie Stuffed Zucchini

I used very little olive oil- sprayed my pan with Pam instead and then just misted olive oil as it cooked. Omitted the mushrooms- not a fan- and used onion in place if the shallot. I also used a drained can of diced tomatoes and dried basil (lots) as that is what I had on hand. The zucchini part was kind of mushy. We loved the shrimp filling though. Next time I make this I will just make it as a casserole without any zucchini

Sweet and Spicy Stir Fry with Chicken and Broccoli

Quick and easy gave this one 4 stars. Flavor is more like a 3. Doubled the sauce but cut down on the chile sauce and red pepper for the kids. I left out the salt all together. Used chicken broth as that is what i had on hand. Added carrots. The flavor was kind of average. Not sure I will make this again.

Slow Cooker Italian Beef for Sandwiches

Doubled all ingredients except for the salt which I left out entirely and the water which I substituted with 3 cups beef broth instead I used a chuck roast. Really liked the flavor- although it was better the second day. Also, it seems as if maybe some of the flavor got cooked away as it smelled so good in the 1st part of the day but seemed to die down a bit after about 4 hours of cooking. Next time I will add a 3rd round of spices half way through the total cooking time. I probably would have rated this one a 5 but the family didn't really rave about it so 4 stars it is. Good enough to make again for sure but will definitely dbl the spices, use beef broth, and add a 3rd round of spices half way through. Edited 10/7/12- From 4 stars to 5. Made a 2nd time with the above suggestions. Dbled the seasonings cooked for 7 hours. Put crock in fridge overnight. Scraped the fat off the top in the morning, warmed it up a bit, added a 3rd round of seasoning and cooked an additional 4 hours. Wow. Outstanding. Definitely does not need any salt if using beef broth. Hubs liked his with horseradish, I mixed pepperocinis in with mine. Can't believe how good this was this 2nd try!

Ghirardelli® Triple Chocolate Truffle Cake

Made this for a birthday party and I was a bit nervous to try it for the 1st time in case it was a flop and we ended up with no cake. I thought this was soooo good but a couple of chocolate lovers in my family said it was good but not outstanding- very surprising. So to be fair I gave it a 4. Mine baked in about 45 minutes. I spread the ganache on slowly so I could get more on. Definitely a rich desert- nothing like cake- just a slice of truffle. My mom said it was maybe a bit over the top for her- WHAT??!! I can't believe it since she LOVES chocolate. Oh well, I will make it again for sure- maybe for a different crowd who knows a good rich chocolate desert when they bite into one :) Oh, and I had to kind of balance the cake pan on the edges of a 9X13 pan for the water bath so the bottom of the cake pan was just floating in the water- worked great though!
